Merlot

D.O.C. Friuli Colli Orientali
A French variety imported into Friuli where it has found an ideal terroir and climate, so much so that it is now considered one of the hinges of Friulan viticulture.

Vineyard: Hillside of Montebello in Fornalis di Cividale

Vineyard age: 1996

Altitude: 203 mt. above sea level

Exposition: South-westerly

Terrain: Lime and sandstone of Eocene origin

Training system used: Guyot

Plant Density: 4750 per Ha

Grape production per plant: Approx. 1,50 Kg.

Wine type: dry red

Grape variety: 100% Merlot

Harvest: Late, by hand in crates with careful selection of the grapes

Vinification: The destalked and lightly pressed grapes undergo maceration
in contact with the skins for a ten-day period at controlled temperature. The must is separated from the skins followed by natural cold decantation. The 20% of the wine refines in oak tonneaux for one year, then it is bottled. A 3-month period of refinement then takes place in the bottle

Alcohol Content: 13,50%

Suitability for Storage: 10 years

Organoleptic characterictics: Full, ruby red in colour, dry bouquet, slighly bitter. It is pleasant, silky, lightly herbaceous. A wine which is immediately pleasant and suitable for ageing

Best served at: 16° - 18°

Ideal with red meats, roasts, fowl and medium-aged cheeses

Friulano

It is an ancient Friulan variety with very well-defined characteristics.

Altitude: 203 mt. above sea level

Exposition: Easterly

Terrain: Lime and sandstone of Eocene origin

Training system used: Guyot

Plant Density: 4750 per Ha

Grape production per plant: Approx. 1,40 Kg.

Wine type: dry white

Grape variety: 100% Tocai Friulano

Harvest: Late, by hand in crates with careful selection of the grapes

Vinification: After harvesting, the grapes are separated from the stalks and lightly pressed, then undergo a 20-hours cryomaceration period. By means of delicate pressing, the must is separated from the skins followed by a natural cold settling, than follows fermentation in stainless steel vats under controlled temperature. The wine remains in steel tank until bottling, where it is left to refine for a further 3 months.

Alcohol Content: 13,00%

Suitability for Storage: 5 years

Organoleptic characterictics: Its colour is straw yellow fading into green. Fine delicate, intensely scented of wild flowers, dry and refreshing, soft and smooth, with a neat taste of bitter almond, round.

Best served at: 10° - 12°

This wine is an ideal accompaniment to light hors-d'oeuvre, noodle soups, cheeses and S. Daniele ham.

Spumante Brut

Plant Density: 4900 per Ha Grape production per plant: Approx. 1,50 Kg.

Wine type: sparkling white

Grape variety: 50% Chardonnay – 50% Ribolla Gialla

Harvest: First days of September, by hand in crates with careful selection of the grapes

Vinification: After destemming process the grapes are softly pressed and they undergo a first fermentation in stainless steel tanks with controlled temperature for 8 – 10 days. After the wine gets clear the sparkling wine making process begins: the wine ferments in pressure tanks thanks to the addition of yeasts for 60 days, until the pressure gets to 6-bar and reaches the desired softness. After cooling down process filtering and bottling begin

Alcohol Content: 11,5%

Organoleptic characterictics: Light straw yellow colour, fine and lingering perlage. The bouquet recalls fruits like green apple and is lightly aromatic. Slightly sparkling wine with a pleasant and vibrant flavor. Typically fresh and plush

Best served at: 8°-10° C

Excellent as an aperitif or with fresh seafood and shellfish as entrées. Good in pairing with leavened cakes or small layered cakes made of puff pastry filled with cream

THE WINERY
Our way of making wine begins in the vineyard with late harvest: that allows us to select the grapes when they express full ripeness at their best. Once these are moved to the cellar of the winery, vinification is done on the basis of traditional methods, at controlled temperature. Next to the shiny and cold stainless-steel tanks the wines then age in the scented oak barrels, where all the aromas melt.   

Our way of thinking is hold in this strong but pleasant contrast, where we experience new paths in order to improve what already exists.
