VINEYARD SITE
“Le Fredis,” “Codis” and “Mattia.” 5,500 vines planted per hectar, trained using Guyot method. Yield of 75 hl/ha.

HARVEST
Hand harvested.

VINIFICATION
Soft pressing of whole clusters immediately after harvesting. The juice is cooled and decants naturally, eliminating particles resulting from vinification. Fermentation occurs in stainless steel tanks at controlled temperature.

AGING
Aged on the noble lees in stainless steel for 6 months with frequent batonnages.

TASTING NOTES
The color is an intense golden yellow. The aromas are that of golden delicious apples and honey, with an elegant mineral undertone that harmonizes with its generous structure and balance. A perfect wine to serve as an aperitif or to pair with soups, raw seafood appetizers, poultry and fish dishes. Serve at 54 - 58°F.

Cabernet Franc 70%, Cabernet Sauvignon 30%.

VINEYARD SITE
“Mattia.” 5,500 vines planted per hectare, trained using Guyot method. Yield of 85 hl/ha.

HARVEST
Hand harvested.

VINIFICATION
Destemmed and pressed, the grapes in stainless steel tanks. During this phase, we conduct several punch downs per day in order to obtain a maximum extraction of color and sweet tannins.

AGING
Aged in oak tonneaux for 10 months and bottle aged for an additional 4 months before release.

TASTING NOTES
Deep ruby red in color. Intense on the nose with notes of black pepper and raspberries. Robust, full bodied with rich, jammy tannins. A perfect wine to pair with roasts, fatty meats, aged cheeses and savory pasta dishes. Serve at 60 - 64°F.

VINEYARD SITE
“Ferrovia.” 6,000 vines planted per hectare, trained using Guyot method. Yield of 70 hl/ha.

HARVEST
Hand harvested.

VINIFICATION
Destemmed and pressed, the grapes ferment in small oak barrels and in stainless steel tanks. During this phase, we conduct several manual punch downs of the cap per day, in order to obtain a maximum extraction of color and sweet tannins.

AGING
Half is aged in oak barrels and half in stainless steel tanks for about 1 year. Bottle aged for an additional 6 months before release.

TASTING NOTES
The color is ruby red with violet hues. On the nose, fragrant aromas of wild berries and herbaceous notes of violets. Soft and silky body with sweet tannins and balanced structure. A perfect wine to pair with salumis and roasted red meats. Serve at 60 - 64°F.
