SOF is the new rosé of Tenuta Campo di Sasso, envisioned by and dedicated to, Sophia Antinori, the daughter of of Marchese Lodovico. The grapes, Cabernet Franc and Syrah, are selected in the San Giovanni vineyard situated on the gently sloping hillside in Bibbona, not far from the Tuscan coast of the Alta Maremma.

The soil type is loam with sand, silt and a small percentage of clay.

The sea breezes allow for good ventilation in the vineyards, creating a benevolent temperature difference between day and night. This preserves freshness and develops complexity. The grapes were handpicked during the early hours of the morning between the 24th – 26th of August, 2016.

After a careful sorting and de-stemming the grapes are gently pressed after a short maceration period. Throughout this brief period our winemaker Helena Lindberg, combining excellent technical knowledge with a gifted natural palate, assesses the juice in order to obtain the specific colour and taste desired by Sophia and Lodovico Antinori. The juice subsequently goes through the alcoholic fermentation in a temperature controlled stainless steel tank.

Skin contact time was considerably shorter in 2016 compared to 2015 however the the bleed was more intense resulting in a colour slightly darker than the 2015. The 2016 Sof has more weight on the mid palate and length with an exquisite balance between the fresh, fruity aromas and delicate flavors.

The wine rests for five months in stainless steel vats prior to bottling.
Special attention has been given to the presentation to the Bottle, a satin finished amphora-shape with the signature, SOF, in relief. The production is limited to 12000 bottles.

Grappa di Biserno – Petit Verdot

This white Grappa is distilled from Petit Verdot grapes grown in the estate’s vineyards. In order to preserve the varietal aromas and characteristics, the marc is taken to the distillery immediately after being softly pressed. Crystal clear in appearance, this Grappa has an intense aroma reminiscent of herbs.

Insoglio del Cinghiale

This wine is from a nearby, quite separate estate, Tenuta Campo di Sasso, comprending 3 plots of 46 hectars has situated in south west of Biserno, 7 chilometres and close to the town of Bibbona. The soils here are very different from the ones of Biserno, most sandy with very good drainage, and little clay. The first vintage here, was 2003, a famously hot summer, which helped both to produce a great Syrah and to put the wine on the map. The debut vintage created a great number of fans. As we celebrate 12 years of production, 2015 offered us another fantastic, suitable celebratory year. Insoglio del Cinghiale makes for a very good, well-balanced wine, true to the region, at an accessible price. It is made from 32% Syrah and the remaining part is a blend of Cabernet Franc, Merlot and Petit Verdot. In Insoglio del Cinghiale we have a very fleshy wine, from the distinctive Upper Maremma terroir. The peppery characteristics coming from the Syrah makes it the ideal accompaniment to game dishes, such as the local wild boar cinghiale (after which it is named), roast pheasant or rich game stews. Slightly chilled, it is equally good in summer with picnics and barbecues.

Lodovico, once again, looked to his friend Michel Rolland, as consultant, when developing Biserno. This is a relationship that goes back to the Tenuta dell’Ornellaia and Masseto days, in the mid-Eighties, and remains strong and constant.

‘Lodovico Antinori asked me to be involved in his new project in Tuscany, and I couldn’t refuse him. We have worked together for more than 15 years, and so I am sure that everything will be done to achieve a wine of the very highest quality.’
