Clairette de Die Tradition

TERROIR : situated in the heart of the Rhone Valley, dominated by mountains, our vineyard grows on rocky and steep hillsides, among the highest in France. Between alpine influences and provencal sun, severe winters and dry summers, our wine owes its character to the contrasting climate of its territory.

SOIL : clay-limestone

GRAPE VARIETY : 100% Muscat à petits grains 

WINE-MAKING PROCESS : after a hand-picked harvest, the Clairette de Die Tradition is produced according to a specific process named the « Méthode Dioise Ancestrale ». The grapes are destemmed and crushed as soon as they arrive in the winepress, then juices are selected and stored in refrigerated vats. This is the beginning of  a very slow fermentation due to the combined effect of yeasts naturally present on the grapes and the very low temperature (0° to 10°C / 32° to 50°F). Then, half-fermented juices are bottled, the sparkling process and fermentation of the natural sugars contained in the juice continue until it reaches 8% vol. (with no drawing liquid added).

COLOUR : brilliant and crystalline, it reveals a pale yellow colour with straw reflections.

BOUQUET : the nose reveals white fruit notes, apple, pear, white flowers and honey scents.

PALATE : greedy and full of freshness, the aromatic palette of the Clairette de Die, typical of Muscat grape, reveals floral notes, vineyard peach, pear, elderflower and honey aromas.

FOOD & WINE PAIRING : ideal as an aperitif, original with a foie gras, it is also perfect with frozen desserts, chocolate cake, or fruit tarts

Crémant de Die Brut

TERROIR : At the foot of the Vercors range along the Drôme river, on its rocky and steep slopes – among the highest in France – our vineyard enjoys a sharply contrasted climate. Severe winters and dry summers mould its flamboyant features under the bright sunshine of Provence.

SOIL : Clay-limestone

GRAPE VARIETY : 83% Clairette Blanche, 15% Aligoté , 2% Muscat à petits grains.

WINE-MAKING PROCESS : Entirely gathered by hand, the Crémant de Die Brut is made using the Traditional Method. After an initial fermentation in tanks, the wine is bottled and the addition of a tirage liqueur made of sugars and selected yeasts triggers off a second fermentation. The maturing process takes one to three years on slats. Adding an expedition liqueur, after the removal of sediments by freezing bottlenecks and disgorging, ends up the process.

COLOUR : Beautiful pale yellow colour with green reflections

BOUQUET : Mild notes of fresh almonds and white flowers

PALATE : Its aromas are enhanced by a hint of citrus fruit

FOOD & WINE PAIRING : Perfect as an aperitif, on its own or in a kir cocktail, it can also be enjoyed throughout an entire meal on fish or white meats.

Crémant de Die Brut Cuvée de Minuit

SPECIFICITY : developed from a selection of cellar master this Crémant de Die is a vintage in limited edition. Raised with special care, this wine reveals as it ages the complexity of its subtle and delicate flavors.

A WINERY, AN ESTATE 
Our winery was set up in 1985 by the joint venture of the MONGE and GRANON families, two wine-growers’ families for four generations. Covering 37 hectares – 86.48 acres – the MONGE GRANON vineyard lies at the heart of the Clairette de Die area.

A COMMITMENT
Being an independent winegrower is to :

  • choose to work the land respecting the wine growing tradition while integrating the technological innovations, always concerned about environmental issues and quality control.
  • run the vineyard and produce a wine that has received all the attention needed.
  • be in charge of commercializing and marketing the products.
