THE BRUT

Terroir

Vinification
We work our Brut according to the Methode Traditionnelle, but with a personal touch. We choose to harvest the grapes at a good maturity, early in the morning to help retain the quality of the fruit as much as possible. The must is fermented in stainless-steel tanks in our cellar. The wine then ages on its lees prior to bottling. Once bottled, the natural sugar from the grapes will re-ferment , it is this second fermentation that creates the bubbles. The wine then spends a long time, about 20 months, sur latte before being disgorged (when the crown caps are removed and the "mushroom" cork is fitted).

Food matching
The Brut is the quintessential party wine, ideal for the aperitif and the end of the meal, although preferably both! Its balance makes it perfect for a more sophisticated dinner as well.

LES TRIES

Vinification
Selected berry by berry, the harvest for Les Tries is exceptionally concentrated. Only the most mature berries are selected, with a view to obtaining great concentration in sugars and aromas. The pressing is long and very delicate; the fermentation and maturation are also carried out over a long period. Extra special care and daily tasting are essential to make this wine.

Food matching
Les Tries is a wine of meditation. All one needs is good company with whom to share this bottle.
Serve at 12°C

This Cuvée in 1989 vintage was included in the books "The 1001 wines you have to taste in your life".

THE PORTAIL

Vinification
The harvest is manual, and the grapes are pressed directly. The must is then transferred straight into double barrels (500 Liters) for a long fermentation. The wine will remain on its big lees for approximately 18 months before being bottled.

Food matching
This is truly gastronomical wine: its roundness, fullness and fruitness will marry perfectly with crustaceans, such as crab, lobster or scallops. It will also work wonderfully with other fish and meats, and can cope with anything that is slightly spiced. Don't hesitate to drink Le portail alongside a cheeseboard.

To enhance this wine, we advise you to decant it approximately an hour before serving at 12°C.

Domaine Champalou - Vouvray
Our family estate has been established for over 20 years and is located within the Vouvray Appellation at the heart of the Loire Valley.
It is here that we work with one of the supreme grapes of the Loire: the Chenin. It is this grape variety, called Pineau de Loire in our region, that allows us to produce such different styles of white wine, both sparkling and still.
Depending on the terroir, our Chenin can be dry, semi-sweet, sweet or liquoreux.
A diversity of wine that we will be happy to present to you.
