Variety
Red, dry semi-sparkling wine obtained by the natural re-fermentation in bottle.
The yeasts remain on the bottom of the bottle, thus making the wine a bit cloudy when poured in the glass.

Wine-making method
The Lambrusco di Sorbara D.O.C. “Rimosso” is obtained from a selection of the best Sorbara grapes entirely gathered in small cases (17 kg. max) by manual harvesting.
Maceration takes place in refrigerated wine press. Alcoholic fermentation is carried out in stainless steel tanks under controlled temperature.
After resting at least six months, in order to improve the limpidity, the wine is ready to be bottled.
Bottles are stored in constant ambient temperature at 12°C, which allows the proper maturation of the wine in presence of its natural yeasts.

Description
Notes of ripened red fruits can be clearly distinguished at the nose, with absolute verticality and clear definition of the perfumes.
The palate perceives the complex bouquet of wild cherry, with fresh juicy and velvet notes in the end.
Elegant and persistent with good balance.
Alcohol strength: 11,5% vol
To be served at 12°C

Wine-making method
Our Lambrusco di Modena Spumante D.O.C. is obtained from a selection of Sorbara grapes entirely gathered by manual harvesting.
The crushing activity respects serious batching criteria. The must undergoes clarification followed by alcoholic fermentation under controlled temperature into stainless steel tanks. After resting at least six months, the wine receives selected yeastsfor the secondary fermentation, prior to being bottled.
The bottles are then stored horizontally for the re- fermentation process in a constant ambient temperature of 12°C, for at least 24 months.
The following steps are remuage, disgorgement and liqueur d’expédition addition.

Description
This Lambrusco has a bright ruby color and high limpidity. Smooth, continuous and well combined perlage. Delightful, compact and distinguished red berries scents can be noted at the nose, with hints of wild strawberries.
The acidity is nice and well balanced.
The ending is persistent and pleasantly clean.
Alcohol strength: 13% vol
To be served at 8°C

The soft pressing activity respects serious batching criteria. The must is submitted to clarification followed by alcoholic fermentation into controlled temperature stainless steel tanks. After remaining at least six months inside the tanks for maturation process, the wine receives selected yeasts, prior to being bottledThe bottles are then stored horizontally in piles for the refinement process at constant temperature of 12°C. The following steps are remuage, disgorgement and liqueur d’expédition dosage.
 

Description
 
Ruby red colour with purplish foam. Clear and bright, with tiny and persistent perlage.
Nose: scent of blooming rose and raspberry pulp, combined with hints of cherries and sour cherries. The palate perceives a clear blend of redberries, with a prevailing tone of wild strawberry. Long finish with good persistence. Well balanced and clean closure.

Alcohol Strenght: 12,5 % vol.
To be served at 8-10°C.

The activity of Cantina della Volta started in 2010 on the initiative of a group of friends, all wine lovers, who asked Christian Bellei to share a new project in the wine sector: give continuity to the production of wines of the Modena area using the Classic Method, widely used in France, better known as the Champenoise Method, namely that of natural fermentation in the bottle..

Christian Bellei represents the fourth generation of wine entrepreneurs in Bomporto (Modena) Italy. The business was started by his ancestors in 1920 and later inherited by his father Giuseppe, who led the family winery until the end of the nineties.

Giuseppe Bellei, better known in Modena as "Beppe", passed down to Christian the values and passion of winemaking, working hard with his son and involving him in various stages of the wine preparation. Father and son shared various visits in Epernay, France, home to noble sparkling wines, attracted by the charm of the Champagne. The purpose of the trips was to study in depth the processing of the wines by the Method Champenoise and then apply it on the grapes pressed in their cellar of Bomporto.

This passion for the Classic Method is the living legacy that led to the birth of the Christian Bellei’s Cantina della Volta. The members of Cantina della Volta ask Christian to respect a single binding condition: continue making quality wines "in his own way". In other words, wisely profit from the strong wine-making skills and continue improving oenological knowledge of wine acquired from his father and the practice.
