PINOSO CEPA 50 organic & vegan.

History and tradition define this wine made exclusively from Monastrell organic grapes, the indigenous variety of the zone, from the oldest vines. For such a special wine we have selected vineyards without irrigation, more than 45 years old. When every bunch of grapes reaches its optimum stage of ripeness, the grapes pass through a very soft de-stemming and crushing process. The temperature is maintained at 22ºC during the first days of fermentation in stainless steel tanks and afterwards it is increased to 28ºC until the alcoholic fermentation is finished. The lower temperature preserves flavours of fresh fruits, while the following higher temperatures helps to maximize intensity of the colour and extraction of ripe tannins.

A very special organic red wine with big personality thanks to the queen of our vineyards, the Monastrell. These grapes are selected especially for the elaboration of this wine, coming from our special selection of old plots located in medium/high zones (500 to 700 m) and with low yields. In this way we obtain very concentrated grapes of enormous organoleptic complexity. The maceration after soft de-stemming is realised in stainless steel tanks for 25 days at a controlled temperature and with continuous over-pumping. All the power of the varieties is intensified by leaving it in oak barrels (50% French and 50% American) for 6-12 months, where the wine acquires a balance in its notes and flavours and finally the wine is left to maturate for extra 12-18 months in bottle prior to release.

The wine, from a limited edition, is made exclusively with an indigenous grape variety of the area called Monastrell. It is a clear gamble on obtaining maximum benefits from the land of Pinoso and its surroundings. Grapes used for this wine come from our selection of un-irrigated vineyards which are more than 40 years old, carefully tended for the whole year following the strict rules of organic farming. Due to very low yields per vine we get very complex and concentrated grapes. Traditional winemaking by controlled fermentation in stainless steel tanks at 28 to 30ºC with continuous over-pumping and long maceration after-fermentation to achieve maximum expression of each grape. Its long stay for 9-12 months in new oak barrels and subsequent maturing in bottle caused a harmonious evolution of this extraordinary author wine.

Bodegas Pinoso was set up as a cooperative in 1932 and the work carried out in the vineyards faithfully respects the wining traditions of our wine producers.

The coming together and effort put in by the founding members of Bodegas Pinoso meant that the winery quickly became renowned for the quality of its wines. This is why, in the years that followed, many other wine producers wanted to join the cooperative and initially in 1969 and later on in 1974, the winery was extended so as to make room for the new producers. After quite a lot more expansion at the beginning of the 80’s, the winery was capable of producing up to approximately 19,000.000 litres. It thus became the most important winery cooperative in the province of Alicante with 650 members. At the end of the 90’s the winery began to rethink its quality policy so as to improve its bottled wines while at the same time designating the first areas of the winery land to be used for certified ecological vineyard plots.
