METODO CLASSICO EXTRA BRUT 'SEITREMENDA'

Made with Chardonnay and Pinot Nero grapes

Altitude: 400 m above sea level.

Soil composition: lime and sand.

Plant density: 5000 vines / hectare.

Cultivation system: traditional Guyot

Yield per hectare: 9 tons

Harvest: manual, harvested into small crates towards the end of August and the beginning of September, depending on the vintage

Vinification: only the decanted free-run juice is used for the “cuvée”. After the first fermentation, the wine is left on its fine lees for 6 months. The second fermentation process takes place in the bottle, where the wine spends at least 36 months. In the ageing cellar the constant temperature is 14-15° C.

Description of the wine
Colour: yellow with greenish hues, soft and persistent froth, fine and elegant perlage.

Bouquet: complex, showing character and elegance, with notes of green apples, white flowers and crust bread

Flavour: notes of white fruit, interesting mineral notes in the aftertaste

Ideal drinking time: -

Serving suggestions: Thanks to its versatility, it is perfect as an aperitif or throughout a meal.

Serving temperature: chilled to about 7 - 8°C.

LANGHE DOC CHARDONNAY

Made with Chardonnay.

Altitude: 350m above sea level.

Soil composition: lime and sand.

Plant density: 5000 vines / hectare.

Cultivation system: traditional Guyot.

Yield per hectare: 7 tons.

Harvest: manual, into small crates towards mid September.

Vinification: The grapes are subjected to a short period of maceration on skins. After soft pressing, the must ferments in steel tanks at a temperature of 17-18°C. The wine spends a long period of time on the fine lees, with frequent “batonnage” .

Description of the wine
Colour: tempting straw yellow with attractive greenish hues.

Bouquet: fruity notes of apple and citrus fruit can be perceived in the nose.

Flavour: Nice acidity, fresh, with an interesting aromatic character in the mouth.

Ideal drinking time: its fresh characteristics mean that it is released for sale shortly after bottling, but expresses its best qualities for up to a few years.

Serving suggestions: with white meat and fish dishes.

Serving temperature: chilled to about 11-12°C

DOLCETTO D’ALBA DOC 'SIREVERIS'

Made with Dolcetto grapes.

Altitude: 400 m above sea level.

Soil composition: medium consistency, lime.

Plant density: 5000 vines / hectare.

Cultivation system: traditional Guyot.

Yield per hectare: 7 tons.

Harvest: manual, in the second half of September

Vinification: maceration and fermentation last an average of 7-8 days and are temperature-controlled at 28°C. After malolactic fermentation the wine matures for several months in steel tanks.

Description of the wine
Colour: deep, bright ruby red with violet hues.

Bouquet: vinous, fruity and fragrant, with notes reminiscent of ripe cherries.

Flavour: full, dry flavour with a pleasantly bitter aftertaste, typical of this variety.

Ideal drinking time: -

Serving suggestions: a wine for drinking throughout a meal, it is perfect with cured meat and cheese snacks, ideal with rice and pasta dishes or with red meat, all combinations which enhance its delightful suitability for drinking.

Serving temperature: 16-18°C

Company details

The Estate is located in Santo Stefano Belbo, on the Seirole hill between the Langhe and Monferrato districts. The area’s main resource has always been winegrowing and the particular geological conformation of the land and the area’s microclimate favour the perfect ripening of grapes and the acquisition of typical organoleptic properties.

This is a small, family run estate, the art of winegrowing having been handed down from generation to generation. The quality that distinguishes our wine is determined by our control of the entire production chain, from the vine to the bottle, via processes which respect tradition while promoting the innovation that distinguishes modern estates. 

The company is currently managed by Marco Capra, who has succeeded in giving the right innovative boost typical of the new generations, while continuing to observe the teachings and experience handed down by his forefathers. The precious consulting skills of the oenologists Dante Scaglione and Daniela Serra is a further guarantee for the production of the very best quality wines
