CHINATO VINO AROMATIZZATO

It is called “Chinato” (cinchona bark) because the main ingredient is CALISAYA BARK, which was once used as an antipyretic. Made from red wine and aromatised with herbs knowingly dosed out and brought together with Mediterranean scents and spices. Calisaya bark, rhubarb, gentian, coriander, cinnamon, cloves and absinthe are just a few ingredients. 

ALCOOL: 18 % ABV.
COLOUR: garnet highlights with orangey streaks
AROMAS: fragrance of spices
TASTE: full and delicate, pleasantly bitterish
PAIRING: it is excellent on the rocks as an aperitif or at room temperature as a meditation wine. During meals you can pair it with herb cheeses, but above all it is exquisite with chocolate desserts.
RECOMMENDED TEMPERATURE: it is excellent on the rocks as an aperitif or at room temperature as a meditation wine.

DUDES SPUMANTE BRUT ROSATO

DUDES: translation in Piedmont dialect of “twelve”, since this is our twelfth wine
GRAPE-VARIETY: piedmontese well-known native vine variety with red grapes
GROWING LOCATION: vineyards at low-hill level facing South-East and South-West
ALTITUDE: approx. 250 metres above sea level
SOIL: white tuffaceous marl
VINEYARDS: average age 15 years
RAISING: The vines are grown using the freestanding espalier system with Guyot pruning.
YIELD PER VINE: kg. 2,2
YIELD PER HECTARE: 4.500 – 4.700
GRAPE-HARVEST: manual; end of September, beginning of October
WINE-MAKING:after a slightly earlier harvest compared to the Langhe Freisa so as to obtain a more pronounced acidic tone, it is pressed and the rosé must is fermented in stainless steel basins at a controlled temperature. Then, using the “Martinotti” or “Charmat lungo” methods, it is frothed in autoclaves.
AGEING: in autoclave at a controlled temperature
ALCOOL: 12 % - 12,5 % vol.
COLOUR: light pink
BOUQUET: fresh fruit scent with hints of cherry, strawberry, raspberry and rose
FLAVOUR: delicate and persistent perlage. Fresh, fragrant and balanced flavour
MATCHING: excellent as an aperitif. With simple starters, fish soups, shell fish
SERVING TEMPERATURE: 8°-10° C

BARBARESCO DOCG SANADAIVE

SANADAIVE: is the translation of Seno d'Elvio in piedmontese dialect.
GRAPE -VARIETY: Nebbiolo
GROWING LOCATION: vineyards facing South-East
ALTITUDE: approx. 300 metres above sea-level
SOIL: white tuffaceous marl
VINEYARDS: average age 20 years
RAISING: The vines are grown using the freestanding espalier system with Guyot pruning.
YIELD PER VINE: 2 kg.
YIELD PER HECTARE: 4000
GRAPE-HARVEST: manual; second ten days of October
WINE-MAKING: after a careful selection, the grap is crushed and fermented on the skins in stainless steel tanks at 28 °C. When the alcoholic fermentation is completed, the wine is separated from the skins and seeds. It is transferred several times to obtain a clear product.
AGEING: after few months in stainless steel tanks, the wine is maturated for a year in medium-sized (from 30 to 50 hl) slavonian oak casks
AGEING IN BOTTLE: some months
ALCOOL: 13 - 14% by vol.
COLOUR: garnet red, with traces of orange.
AROMA: rose and violet nose, dried flowers.
FLAVOUR: plenty of body taste, delicated, long bitterish finish and balanced.
MATCHING: red meat dishes, wild game and seasoned chees.
SERVING TEMPERATURE: 18°- 20° C. Open the bottle some hours before serving.

The wine cellar has different areas for each step in the wine making process: a wine making area with stainless steel tanks for fermentation and storage; a refinement area with medium-sized oak barrels; a bottling and packaging area; a charming basement kept at the ideal temperature for ageing wine in the bottle, made of langa stone and old bricks. An eco-friendly photovoltaic system generates the necessary electricity for the company. Furthermore, an innovative plant-purifi cation system cleans the waste water produced by the cellar.
