Spumante Rosato

Vinification: After a manual harvesting, the fruit is de-stemmed and crushed, just a couple of hours later the must is separate
from the skins. After a primary fermentation in tanks the wine is transferred in pressured tanks for the second fermentation to
make sparkling the wine.
Aging: b8 does not require aging as it should be drunk young and fresh
Tasting Notes: Sparkling and dry wine with a beautiful onion skin pink color, perfect for aperitif, but also to be paired with all
the simple dishes especially in summer.

Vinification: After a manual harvesting to preserve the integrity of the grape, the fruit is –and crushed to begin the primary alcoholic fermentation process. The wine is then racked into stainless steel tanks where it rest and develops a malolactic
fermentations which refines its taste. The wine is than placed into stainless steel tanks for aging.
Aging: After 8-9 months of aging in stainless steel tanks, the Dolcetto is then aged in a bottle for one month.
Tasting Notes: Intense Violet color, invitingly tannic with a long finish that is very persistenton the palate. Best paired with cured meats such as salami, sharp cheeses and beef. Serve at room temperature.

31 10 Red Wine

Vinification: only in the hot and windy years, when the ripeness is perfect we can harvest manually the best grapes, at the end of October, to produce this special wine. The fruits are de-stemmed and softly pressed to begin the primary alcoholic fermentation process in a stainless steel tank with the temperature under control. When the fermentation is finished the wine is transferred filtering stabilized to be bottled.
Tasting Notes: the color is ruby red and garnet . The aroma remember flowers, especially roses, with some spicy notes. At the taste the sweetness and the freshness are perfectly balanced with a long persistence.

Places:
We are in the Alto Monferrato Acquese area, a place particularly suited to grow excellent grapes. The vineyards are distributed in the villages of Ricaldone , Cassine and Strevi.
The hills compose all the landscape, where an extraordinary puzzle of vineyards planted in every direction, sometimes in round - hill , sometimes ritocchino style (from the top to the bottom of the hill) ,form a unique panorama.

History:
Since more than five generations our family grows grape from its vineyards and it is also thanks to the experience , passion and affection handed down to us, if today the extension is increased to 50 acres all planted with vines.

Winery:
The winery was founded in 1994 by Pier Luigi Botto; it is situated on the top of the village of Cassine , in the Convent where in the eighteenth century resided the community of Capuchin friars which already produced wine. The building is typical in bricks and stones, enclosed in the wall that runs along the scenic route which connect the upper zone of Cassine with the near town of Ricaldone . The property has been handed down familiarly thanks to " Don Giovanni Benzi " that always,carefull to the family choices, encouraged everyone to continue the traditions of wine and vineyard .
