DOCG ASOLO PROSECCO SUPERIORE EXTRA BRUT

A sparkling white wine made of Glera DOCG (prosecco) grapes from old and carefully selected vines of superior quality located in hills of Asolo.

Production zone:
Vineyard “Asolo 14 Settembre 2009” located in the higher part of the slopes with ideal ventilation, strong temperature fluctuations, low per-hectare yield.

Altitude:
About 250 m. a.s.l.

Type of soil:
Clay and limestone composition.

Training system:
Cappuccina.

Plants per hectare:
3000

Harvest period:
Last ten days of September.

Wine production method:
The grapes are selected, put into cases, then softly pressed. After decanting and then standing for 20 hours at low temperature, selected yeasts are added to the wine. Fermentation lasts for around 15 days at 17°C; afterwards the wine is kept in temperature controlled tanks until the start of sparkling process.

Sparkling process:
Further fermentation in autoclave with selected yeasts at 16°C for 90 days.

Refining:
30 days in the bottle.

Characteristics:
Elegant perlage, exalting intense flavours of apple tree, elder and white wisteria.
Very dry taste, sapid and intense.

Best served with:
Excellent as aperitif.
Typical cuisine from Asolo: grilled white water fish (trout of the river ‘Lastego’)

PROSECCO DOC TREVISO EXTRA DRY

Grape varieties:
Glera DOC (prosecco) 90%, Chardonnay 5%, local aromatic white variety 5%

Production area:
Vineyards Caltran (locality Crespano del Grappa).

Altitude:
About 170 m. a.s.l.

Type of soil:
Clay and limestone composition.

Training system:
Cappuccina – Sylvoz.

3000

Harvest period:
First ten days of September.

Wine Production method:
The wine-making process is done in white with a soft pressing using selected yeasts and a fermentation at 18° C for 15 days. It follows the decanting and the wine is kept in heat controlled stainless steel tanks at a temperature of 8° C until the sparkling process.

Sparkling process:
Further fermentation in an autoclave with selected yeasts at 18° C for 30 days.

Refining:
30 days in bottles.

Characteristics:
It is straw yellow in colour with greenish reflections. Its fragrance is fruity with hints of apricot, apple and citrus fruits as well as jasmine notes. It taste is fresh and well structured.

Best served with:
Ideal as an aperitif or with starters.

SPUMANTE DOLCE CARA MEA

Grape varieties:
A sparkling white wine made from Glera DOC grapes (prosecco) Malvasia and Moscato.

Production area:
Vineyards situated on the slopes near the winery.

Altitude:
About 200 m. a.s.l.

Type of soil:
Clay and limestone composition.

Training system:
Sylvoz and Cappuccina.

Plants per-hectare:
3000

Harvest period:
First ten days of september.

Wine Production method:
The ripe grapes are selected, put in cases, then softly pressed. Selected yeasts are added to the wine; fermentation is at 18° C. The wine is kept at low temperature in stainless steel tanks at a temperature of 0° C until the sparkling process.

Sparkling process:
It is done with a further fermentation in an autoclave with selected yeasts at 18° C for 30 days.

Refining:
30 days in bottles.

Characteristics:
Yellow straw colour with golden reflections. Persistent and fine foam. Fruity bouquet with hints of roses and elder flowers. Sweet taste, pleasantly fresh and persistent.

Best served with:
Ideal with desserts, cream cakes, italian Christmas pudding.
Asolani cuisine: Asolana cherry pie with strawberry.
