Valpolicella DOC

  • VINIFICATION: After the de-stemming, alcoholic fermentation and maceration are carried out with careful monitoring of the temperature for 8 days. The refining process takes place in steel tanks for 6 months.
  • ORGANOLEPTIC CHARACTERISTICS: Valpolicella Grotta Del Ninfeo has a vivid ruby red colour with purplish tinges. On the nose the red fruit scent is immediately perceptible. On the palate it is fine and elegant, with a slightly acidulous and dry mouthfeel, characteristic of this vintage. It is a dynamic wine made for sharing.
  • FOOD PAIRING: This wine matches well with main courses, cold cuts, red and white meat served chilled.
  • SERVING TEMPERATURE: 14-16° C

Friulano DOC

  • HARVEST: Third week of September
  • ALCOHOL: 12,5% by vol.
  • VINIFICATION: After the crushing and de-stemming process, the grapes go through a brief maceration on the skins for about 1-2 hours and then are pressed. The must is stored for 24-36 hours at cool temperature and decanted. The wine goes through a first fermentation (alcoholic) which occurs at the controlled temperature of 16° C and then through a second fermentation (malolactic) at 50%.
  • ORGANOLEPTIC CHARACTERISTICS: Friulano Villa Caratti has a pale straw yellow colour with greenish hints. With a great aromatic bouquet, on the nose it is reminiscent of wild flowers and has a definite note of yellow pulp fruit, such as peaches and sweet apricots. Fragrant and pleasant on the palate, it is balanced and ample, with a light finish of bitter almond.
  • FOOD PAIRING: It matches well with light appetizers, soups, risotto, fish or egg based dishes.
  • SERVING TEMPERATURE: 10-12° C.

Dom Domi Spumante

  • VINIFICATION: Once pressed, the must is stored for 24-36 hours at cold temperature. After being decanted, the wine goes through the alcoholic fermentation which occurs at the controlled temperature of 17-18° C. The second fermentation takes place in small tanks, where it is refined for 4 months and ,afterwards, in the bottle for 3 months at least before being released.
  • ORGANOLEPTIC CHARACTERISTICS: Dom Domi has a crystal clear straw yellow colour with greenish tinges, a fine perlage and a persistent mousse.
    On the nose it has a light floral bouquet with hints of acacia flowers and armonic and fruity apple scents.
    On the palate is round and equilibrate, with a pleasing increasingly carbonic feel.
  • FOOD PAIRING: Great as aperitif, it gives its best with appetizers and fish-based dishes. So well-balanced, it matches perfectly with cream and custard desserts.
  • SERVING TEMPERATURE: 6-8° C.

In 1958 Domenico Fraccaroli started his business in a “small piece of Paradiso” in Friuli Venezia Giulia (Paradiso di Pocenia, Udine), producing both white aromatics wines, such as Friulano, and red firm wines, as Refosco dal Peduncolo Rosso.
In 2002, this time in Verona, in a small town called Lavagno, his son Tiziano Fraccaroli decided to widen the range of products with the most refined wines of the area, and that is how Grotta del Ninfeo Amarone, Ripasso, Valpolicella Superiore and Recioto was born, achieving to this day several rewards and quality certificates.
The passion for quality and tradition also led them to produce other typical flavours of Veneto region, Extra Virgin Olive Oil and Vialone Nano Rice.
Currently his sons Domenico and Luca and his daughter Maria are actively contributing to the company and  brand success with a great commitment and passion, strengthened by the cultural and working legacies of their grandfather Domenico and father Tiziano.
