CORTIJO TRIFILLAS

VARIETIES
Tempranillo (33%), Cabernet Franc (33%) and Syrah (33%).

REGION
Vino de la Tierra de Castilla.

AGEING
Upon completion the malolactic fermentation, the wine is aged for 12
months in French and American oak barrels to 50% and subsequently
pass to an ageing in the bottle at controlled temperature and humidity
which give the wine its elegant bouquet and persistence on the palate.
TASTING NOTES
Wine of a dark red cherry color, with garnet tones and high depth, in the nose
the varietal notes are well complemented, with the contribution of its ageing
during twelve months in the barrel providing the wine with the notes of toasted
and certain evocation of spices.
In the mouth it is well-bodied, with a greedy entry and a balanced acidity.

BEST WITH
Ideal for all types of cheeses, meats, roasts and spicy dishes.

VINIFICATION
Grapes at the optimum moment of ripeness are harvested by hand and
fermented separately. Malolactic fermentation in barrels and further
ageing in oak. Once completed the process of ageing, the Coupage is

AGEING
In American and French oak of the first, second and third use during 4 months.

TASTING NOTES
Wine with great personality, fresh and aromatic. Aromas of ripe fruit and
compote, with smoked and toasted touches typical of aged wine perfectly
integrated. Round and fleshy on the palate with a fresh step and at the same
time fatty and sweet.

BEST WITH
Perfect for all types of appetizers and meals. Ideal for grilled meat.

VINIFICATION
The grapes are harvested by hand and fermented for 15 days with
maceration of grape skins, each variety separately. The Monastrell variety
performs malolactic fermentation in concrete tanks before its ageing in
oak during 4 months. The Syrah variety meanwhile performs malolactic
fermentation in American oak barrels with its posterior racking and ageing
for 4 months in the same barrels.

TASTING NOTES
Cherry color with a predominance of aromas of ripe red fruits on a mineral
and spicy background. Soft and velvety in the mouth. Round, ripe, persistent,
harmonious and elegant on the palate.

BEST WITH
Ideal to accompany all kinds of meats, stews, roasts, cheeses and spicy
dishes.

VINIFICATION
The Monastrell grapes from engrafted root stock are harvested by hand
using crates and pass through a conveyor belt for selection of clusters before
barreling. The fermentation is carried out for 25 days with maceration of
grape skins. The malolactic fermentation is performed in French oak barrels
that is where it performs its ageing for 12 months.
