Kleine Rust White (Chenin Blanc / Sauvignon Blanc) 2016

Tasting Notes
The nose expresses guava, white peach and pear drop notes. The palate shows luscious ripe tropical fruit with a hint of herbs, a lingering aftertaste of grape-fruit and a zesty acidity.

85% Chenin Blanc, 15% Sauvignon Blanc

Food Suggestions
A great accompaniment to spicy chicken dishes or fresh Ceaser salads.

In The Vineyard
The grapes used for this wine are harvested from 5 - 20 year old bushvines planted high up in the Bottelary Hills. The soil types vary between the blocks of vines from red clay stone to very sandy soils. Grapes in sandy soils ripen a bit faster due to higher temperatures in the vineyards – therefore we blend in some Sauvignon blanc to bring a line of fresh acidity to the wine.

About The Harvest
The grapes used for this wine are harvested from 5 - 20 year old bushvines planted high up in the Bottelary Hills. 
Grapes are picked at optimum ripeness around 22° Balling.

In The Cellar
The grape juice allowed some skin contact with the grapes. The juice always partially go through a native yeast fermentation, before it is inoculated with a special brew of different commercial yeasts.

It is fermented cold in stainless steel tanks over a period of 2 to 3 weeks at temperatures varying between 11° - 15° C and left on its primary fermentation lees for at least 3 months before refinement and bottling.

Varieties: 83% Chenin Blanc, 17% Sauvignon Blanc.

Stellenrust is establishing itself as one of the largest growers of bush vine Chenin Blanc in Stellenbosch. The Kleine Rust White is the starting point in our drive to showcase the versatility of, especially Chenin Blanc in the Bottelary Hills.

Kleine Rust Rosé (Pinotage) 2016

Tasting Notes
A strawberry soufflé at its best. This wine shows ample summer fruits on the nose – it is highly concentrated with raspberry, cherries and ripe peach and apricot notes. These flavours are carried forward onto the palate ending in a rich and soft aftertaste.

In The Vineyard
The grapes used for this wine comes from 7-17 year old trellised vineyards planted in the Bottelary Hills to decomposed granite. Grapes are specifically grown for making Rosé and canopy control forms an intrinsic part of vineyard management. By reducing the size of the canopy and getting better sun expo-sure, we manage sun kissed ripeness at lower sugar and therefore lower alco-hol levels.

About The Harvest
Grapes are picked at a ripeness of 22º Balling and the juice allowed skin contact with the grapes for a maximum of 6 hours.
In The Cellar
The juice is separated from the skins and then inoculated with a homemade brew of yeast typical to aromatic white varieties.

It is fermented cold in stainless steel tanks over a period of 2 to 3 weeks be-tween 11 – 15°C and left for a short while on its fermentation lees to extract more flavour.

Kleine Rust Red (Pinotage / Shiraz) 2015

Tasting Notes
Ripe raspberries and some pepper spice on the nose. The palate is soft, sumptuous, juicy and round with elegant tannins and lots of berry fruit.

51% Pinotage, 40% Shiraz, 9% Cinsaut

Food Suggestions
This wine will complement food such as a rack of lamb with a mint dressing or even a thickly cut fillet of beef.

In The Vineyard
The grapes for this wine come from a section of vineyards on our Golden Tri-angle farm on the slopes of the Helderberg in Stellenbosch.

About The Harvest
Grapes are picked at optimum ripeness of 23 - 25° Balling.

In The Cellar
Grapes were kept on the skin for cold maceration for at least 3 days. This also allows some natural fermen-tation to take place. The juice is then inoculated with a homemade brew of yeasts including three different commercial strains.

It is fermented in open stainless steel tanks at temperatures between 24 – 28°C and kept on its skins for 4-7 days with regular pump overs and punch downs. After fermentation, the free run juice is drained and the skins are gen-tly pressed. It finishes malolactic fermentation in stainless steel tanks. Aged for 8 months in 3rd and 4fh fill French oak.

Additional Information
Pinotage and Shiraz are two of the varieties that can express genuine fruit purity and forms a great synergy when blended in a search for fresh ripe fruit.

Stellenrust was established in 1928 and has ever since produced some of the most superb quality wines that the Stellenbosch region from South Africa can offer. It consists of about 400ha (200ha planted) of which half is stretched over the Golden Triangle area of Stellenbosch, internationally recognised for some of the best red wine soil in South Africa.
