Pinuaga 200 Cepas

To craft this wine we conduct a rigorous selection of our oldest vines 45+ year old. Annual production is limited to 5.000 bottles and we only release this wine in those vintages that we consider to be the best. A lovely customer of ours described this wine as " a party in your mouth".

Grape Variety: 100% Tempranillo

Soils/Vines: This wine comes from a single vineyard of 3 Ha named El Aguila, with an old clone of Tempranillo called Cencibel in our region. This special clone produces smaller grapes with very soft and silky skin and has a much longer ripening period. Soils are red made of red clay which the origin of the  earthiness of this very special bottle of wine.

Wine making: Vines are hand-harvested during the night in 10 kg cases. Before grapes enter the winery they are classified using a sorting  table. Grapes are de-stemmed and crushed to obtain maximum extraction. Cold pre-maceration during 2 days and fermentation in stainless steel tanks during 30  days with several delestage during fermentation phase

Ageing: Wine is aged in French and American oak 225 liter barrels during 14 – 16 months and is stabilized naturally. 30% of new oak in this wine 70% used oak

Food pairing: Red meats, all sorts of stews and of course the typical food from La Mancha like"migas" and "gachas". Decant the wine; as many good wines, it likes to “breathe” in the glass to show all its aromas.

Pinuaga Colección

FIRST WINE OF THE PINUAGA COLLECTION

This is a very special wine for us as it is the first wine we made at Pinuaga and hence why we call it Colección; Many of our customers recognize the label as the original pinuaga wine

Grape Variety: 100% Tempranillo

Soils/Vines: This wine comes from a Single Vineyard of 6 Ha named la Lastra in Latin flat stone that Romans used to pavement the roads. These stones help retain the water in the vines and also provide a more mineral character to the wine.

Wine making: Vines are hand-harvested during the night in 10 kg cases. Before grapes enter the winery they are classified using a sorting  table. Grapes are de-stemmed and crushed to obtain maximum extraction. Cold pre-maceration during 2 days and fermentation in stainless steel tanks during 25  days. Delestage during the initial phase of the fermentation.

Ageing: 9 months in French & American 225 liter barrels. 5% of new oak is used , the rest being used oak for a maximum of 2 wines.

Food pairing: This wine is ideal for all sorts of Mediterranean food, including stews, grilled red and White meats, stews as well as deer and partridge.

Pinuaga Rosé

A VERY SPECIAL ROSÉ

This wine is the result of the hard work of 2 women Pilar Garcia Granero, and Esther Pinuaga two female winemakers who believe that Spain is one of the best places to make authentic Saigne Roses. “We made this rose wine like our grandmothers used to cook , slowly with much care and love.”

Grape Variety: 100% Tempranillo / Cencibel

Soils/Vines: This wine comes from a single vineyard of 3 Ha named El Aguila, with an old clone of Tempranillo called Cencibel in our region. This special clone produces smaller grapes with very soft and silky skin and has a much longer ripening period. Production  is limited to 6.000 bottles

Wine making:

Vines are hand-harvested during the night in 10 kg cases. Before grapes enter the winery they are classified using a sorting table. Grapes are de-stemmed and crushed to obtain maximum extraction. Must remains in contact with skin before fermentation begins for 6 hours at very low temperatures. Wine is then bled-off / saigned to another tank and fermented without skin contact.

Food pairing: Fresh, versatile and elegant, combines perfectly with pasta, salads and rice dishes. Also great with barbecue grilled fissh and chicken .

Company details

In 1960 Valentin Pinuaga Salazar , first generation of winemakers in our family, established  the winery in the village of Corral de Almaguer, province of Toledo. Since then we have been taking care of the vines he planted with much care and respect.

During 30 years Valentin Pinuaga Portillo, second generation maintains the old vines and recuperates clones of Tempranillo and begins to apply organic farming techniques. These special clones of Tempranillo are called Cencibel in the area; with smaller grains, silky skin and longer ripening cycles.

In 2003 Valentin Pinuaga and Esther Pinuaga build a new winery in the center of the old bush vine plot.

Our estate is located in the province of Toledo, south of Madrid, at an altitude of 750m above sea level, were we craft wines under Organic Farming practices.

Today our winery supplies wines to more than 13 countries and has an excellent and loyal customer base to whom we are very grateful.
