Rosso Colli Berici D.O.C.

GRAPES
Red grapes coming from selected vineyards grown in Colli Berici hills: Merlot, Tai Rosso and a small percentage of Pinot Nero. This blend of different and unique grapes gives elegance and complexity to the final product.

VINEYARDS
From selected vineyards in the hilly area of Colli Berici. The vineyards are between 20 and 25 years old. The soil is of volcanic origin with a particular micro climate and a favourable sun exposition.

VINIFICATION
Vinification in red. Maceration at controlled temperature of approx. 22-24 °C. in order to enhance the fruity aromas. At the end of the fermentation, the wine is poured in oak barrels and casks for one year minimum.

Alcohol content: 14.50% vol.
Total acidity: 5.41 g/l
Residual sugars: 4.5 g/l
Total dry extract: 31.20 g/l
Ph: 3.44

CHARACTERISTICS
• Colour: ruby red with intense shades;
• Bouquet: intense with hints of mature cherries and plum jam, spicy notes;
• Taste: full-bodied, smooth and velvety, tannins are intense but soft.

FOOD MATCHES
It is suitable with all dishes; it perfectly accompanies roasted red meats, game, tasty first courses and mature cheese.

SERVING TEMPERATURE
Serve at 18°-20°C.

VINEYARDS
From selected vineyards in a hilly area, in the Soave Classico region. The wine harvest starts between the middle and end of September when the Garganega grapes exhibit the typical golden tinge with green hues. The soil is volcanic.

VINIFICATION
White wine fermentation. The grapes are destemmed and soaked for a short time, then undergo soft pressing. Fermentation takes place in steel tanks at a controlled temperature of about 16° C. It is left to rest on fine lees for about 3-4 months.

Alcohol content: 13.00% vol.
Total acidity: 5.70 g/l
Residual sugars: 4.2 g/l
Total dry extract: 32.00 g/l
Ph: 3.18

CHARACTERISTICS
• Colour: straw-yellow with green-gold hues;
• Bouquet: fine and characteristic with sweet flowery hints of chamomile, elder and cherry;
• Taste: harmonious, fruity (white peach). Persistent with a strong mineral taste and flint touches.

FOOD MATCHES
Perfect as an aperitif, it is also ideal with first courses, fish, poultry meat and fresh cheeses. Suitable for ageing.

SERVING TEMPERATURE
Serve at 8°-10°C.

VINEYARDS
Wine obtained from Cabernet grapes grown in the heart of Veneto regione. Vineyards are located on hills with volcanic soil.

VINIFICATION
Red vinification. The grapes are destemmed, then follows the maceration and a soft pressing. Fermentation under controlled temperature in steel tanks at 18°-20°C.

• Colour: deep ruby red with violet reflexes,

This year marks 70 years since the foundation of Cantina di Gambellara, the first cooperative winery in the province of Vicenza, established in 1947 on the ashes of the previous winery called Enopolio di Gambellara, operational from as far back as 1920. Enopolio means/evolves into Monopoly, a name that emphasises the monopoly of the Gambellara DOC denomination in the area, but it is also the name of the brand new selection which contains little treasures: Garganega, a native vine in all its variations and shades starting from Soave, moving on to Gambellara Classico, until reaching Garganega dried in “picai” from which are produced Recioto and Vin Santo di Gambellara DOC, a denomination that the winery itself helped to draw up since its foundation. Gambellara is a land of basalt, dark rocks and an extinct volcano that have characterised the area and added great aromatic finesse to the wines.
