GRAPE TYPE: 100% Tempranillo

VINEYARD AGE: More tan 20 years old

WINEMAKING: Manual picking in 15 kg boxes, with double check of the bunches when they are selected in the vineyards and when they enter the winery.
Classic production with destemmed and semi-squeezed grapes. Cold pre-fermentation followed by a 25ºC alcoholic fermentation with native yeasts. Two pumping overs per day. Malolactic fermentation in barrique at 20-22º C. The wine matures 5 months in the bottle before being sold in the market.

ALCOHOLIC GRADE: 14% VOL.

AGEING: Maturing in French oak barrique for twelve months.

COLOUR: Clean and shiny, picota red colored and intense violet tones in a thin layer.

NOSE: Intense aroma to ripe black fruits, blackberry and blueberry with a touch of vanilla and high roast coffee.

MOUTH: Balanced and strong, with light tannins and pleasant. In the after taste it leaves flavors of vanilla and red fruits.

PRODUCTION: 20,000 bottles.

MARRIAGE: Red meats, roasts, cooked vegetables, every type of hunting, matured cheese and foie.

TEMPERATURE FOR SERVING: Between 14ºC and 16ºC.

The Winery
Severino Sanz winery is engaged in the processing, distribution and sale of wine as well as the promotion of the wine culture.

The winery is located in de la Vega of Serrezuela.,The municipality has an area of 27.85 km ² with a population of 171 inhabitants. The winery isone of the two wineries in the province of Segovia with the Designation of Origin Ribera del Duero..

It consists of about 12 acres of tempranillo wines, among which some are several centuries old, and it should be highlighted the combination of traditional and modern when making wine.

Our goal is to achieve excellence in the vineyard to get the best wine. It’s all about quality, not quantity.

Our winery is open to those who would like to feel winemaking and taste our wines in situ.

History
Bodega Severino Sanz is a family winery, of the Denominación de Origen Ribera de Duero, located in Montejo de la Vega de la Serrezuela, in the province of Segovia.

It was established by three siblings: Mª Dolores, José Félix and Iñaki, who named the winery after his father, SeverinoSanz. He passed on the respect and love for the land and wines. This ensures a healthy grape, which is the only way to achieve a great wine.
