Babbìo

Babbìo is a lively, fresh and fragrant wine, produced for those who love dinner at sunset on a summer evening. It is pure tasting fun that with every sip evokes the salty intensity of Sicily and the sunny richness of its premier varieties. To have a drink with a smile!

Origin: Mazara del Vallo, south-western Sicily
Age of vineyards: adult vineyards, between 10 and 20 years
Yield per hectare: 0,7 tons
Vine density: 4,000-4,200 p / ha
Soil type: sandy, calcareous
Altitude: 35 – 40 metres above sea level
Training: Counter
Pruning: Double Guyot
Grape variety: a blend of native aromatic vines
Harvest: by hand, during the first ten days of August
Vinification: fermentation in steel tanks at a controlled temperature. The wines are then blended; Babbìo subsequently acquires its “lively” character through a quick addition of yeasts in an autoclave
Refining: in autoclave for 40 days
Total acidity: 7.4 g / l
Alcohol by volume: 11.5%
Colour: very pale yellow on which strong greenish tints prevail
Aroma: Intense and ample bouquet of white-pulp fresh fruit and citrus notes
Taste: Its perlage exalts freshness and flavour
Pairing: Excellent as an aperitif, ideal for starters with raw seafood and second courses of white meats

PALMARÈS BRUT Grillo

Palmarès is a Latin word that means “worthy of victory”. We chose it to signify the excellence of our Spumante, which is yet another expression of such a treasure as Grillo grapes. We grow them in a vineyard that combines the peculiarities of a terroir like that of the WWF Nature Reserve after which our Company is named, and the influence of the sea and its salty breezes.

VIVITIS BIO Grillo

Two specific features distinguish Vivitis Bio: it is made from organic grapes and at no time is sulphur dioxide added during the production stages. Vinification: fermentation in 100-hl steel tanks at a controlled temperature with partial maceration of the skins and contact with yeasts for 3 months
Refining: in a steel tank for 2 months and 3 months in the bottle
Alcohol by volume: 11,5%
Colour: straw yellow with greenish hues
Aroma: intense and persistent, fruity and floral notes and hints of white peach
Taste: soft and balanced
Pairing: Excellent with aperitifs, seafood, roasted fish and grilled vegetables

Company details

As well as vines, we cultivate respect for nature

Cultivating the land to produce good wine, coincides with respecting it. “Being at one with nature” is a key component for working within a Nature Reserve. Our mindset results in the conservation of the natural habitat and a sustainable low impact on the environment at the same time as offering maximum control and care through the entire winemaking process. This is the way to obtain excellent quality grapes that, without the need for synthetic chemicals or genetically modified organisms, maintain the original fragrances and flavours that this wonderful soil provides. Our estate, situated at an average height of 25 meters above sea level, is fertile, largely flat  and completely irrigated. The soil tends to be calcareous and have great depth and permeability and medium density. All the features that show this is a natural place for wine making.
