With the acquired and deeply growing knowledge of the vineyard , a Premium Cuvée , at the level of a Grand Cru Classé, the Elixir du Grand Enclos, in Graves red and white , has recently come to life in small quantities and only in the vintages that merit for it.
Grand Enclos du Château de Cérons red Graves claims to be a perfect expression of the Graves terroir. It is a distinguished fine wine that has aromas of ripe fruits lightly veiled by characteristic notes of smoke , that has power and dreamy balance that assumes while ageing all the nobility of its rank. The tannins melt into a bath of fruit and their structure, both soft and slightly restrained , dignified and nearly austere, seems to whisper : "Yes, but not right now!" Cabernet sauvignon, assembled for 40-50%, depending on the year, brings a remarkable bouquet, and because of its structure , a great ageing potential. Merlot adds the charm of its racy bouquet and its suppleness, so to create each vintage, a wine with such a marked personality. Aged in the best oak barrels, the wine will not leave them until after 12-14 months. The second label of the Estate, Château Lamouroux, come from the youngest vines, reinforces the class of the first label offering a different style of wine, more ready to drink, but equally delicious, falling itself as well in the line of quality wines of the domain.
Sémillon, which expresses itself so well in poor soil, brings its volume ,flavoured flesh and sweet aroma up to 60%. Sauvignon ,with aromas of flowers and fruit, brings liveliness and freshness for 30%, leaving a 10% of Sauvignon Gris, very fragrant, for a perfect alchemy. Straw-coloured to golden, Grand Enclos du Château de Cérons white Graves is a wine with a fine nose and fruity that swings between citrus and peach, as to describe the role of the port of Bordeaux, open to the world, and mingling floral and mineral notes with those of wax and honey. Sometimes a slight scent of resin is there as a reminder of the presence of pine trees in the region. As a starter in the mouth, you will discover a surprisingly fleshy attack, vivacity and roundness, a perfect combination of gifts carried by Semillon, rich and ripe and by the Sauvignon, fresh and fruity. It finally possesses the mineral characteristic of the great wines. Fermented and aged from 40-60% in new barrels, it will not leave the barrels until after about a year. Already enjoyable in its youth, these are white wines that can be forgotten for some years in ones cellar.
The domain of Grand Enclos du Château de Cérons also offers a dry white wine fermented in vats, fragrant and fruity, a delicacy to be opened more quickly: the Château Lamouroux.
Like its famous cousins Sauternes or Barsac, Grand Enclos du Château de Cérons sweet is a Golden wine. It benefits from the magic of the Ciron, the small stream tributary to the River Garonne, allowing the "noble rot" or Botrytis cinerea to develop. So that the magic occurs, the fungus must get settled when the grapes are ripe (before, its a scourge called grey botrytis , which is fatal to the crop). At the end of the summer, the Ciron generates a moisture favourable to the night fogs that allow the development of botrytis on the grapes. The fungus will feed on the water in the grapes, thus promoting the concentration of sugar. The berries are then picked by hand in successive passages as only the berries that are ready must be collected. The sweet Cérons wines are appreciated by the finest connoisseurs for their golden colour, aromas of tropical fruit and apricot, so rich and yet so airy, lively and sappy, combining finally, exquisite delicacy and elegance. It knows no limit to their capacity to age.
It is in the center of Cérons, in the heart of Graves, and at few kilometers hardly from the Sauternais , that opens the gate of Grand Enclos de Cérons. The Estate includes a large and elegant bourgeois house dated 1875 and giving onto an enclosure surrounded with a three meters high wall which contains 10 hectares of vineyard.The Estate further owns and cultivates 20 hectares on the magnificent plateau of Podensac just outside Cérons. It has been taken over in 2000 by Giorgio Cavanna, former co-owner of one of the nicest estates of Tuscany : the Castello di Ama, a reference of Chianti Classico. This wine lover and Bordeaux enthousiast has only one purpose:emphasize all terroir's potential and elaborate wines of exception , either in red , or white or sweet . The search for quality starts in the vineyard : manual leaves thinning out , green harvest , reasoned cultivation etc...are performed each year . Grape harvest is by hand and made with several passages for the white and sweet wines . The cellar, entirely renovated and enlarged , combines tradition and modernity , allowing to bring all the necessary care required for the elaboration of outstanding wines . The technical team is not lesser with in control Xavier DAUBA and Bertrand LEON, son of the famous and highly respected winemaker of Mouton Rothschild.
