Intense garnet in colour. The nose is prominent with plenty of black current, black pepper and spices. The palate is full of dark berry fruit, cassis and cherries, supported by soft, easy drinking tannins.
Grapes: 100% Shiraz Vineyard area: the vineyards are situated in the top quality wine-producing area in the south west of Sicily. Vine density is very high, between 4.000-5.000 vines per hectare, ensuring that the juice from the grapes in highly concentrated, resulting in an excellent quality wine.
All the Shiraz vineyards are equipped with a Drop irrigation system, which also facilitates ideal conditions for vine training.
Harvest: grapes are carefully picked by hand at the beginning of September, when they had reached optimum maturity without becoming overripe, which is always a major consideration in Sicily.
Vinification: the grapes are destemmed, but not crushed. The must is fermented with select yeasts at 28°C for 8 days. After primary fermentation, selected bacteria are added, and malolactic fermentation takes place.
Santa Tresa Avulisi is a top class wine, a limited production of 4000 bottles made only in the best vintages with grapes coming from the oldest vineyard of Santa Tresa.
Grapes: 100% Nero d'Avola. Vineyard area: The 100% organic grapes come from our oldest vineyard, with vines dating back to 1963-65. The yield is extremely low at about 25hl/ha.
Harvest: The grapes are picked at the end of September when they have reached perfect maturity. Every grape is picked by hand and once de-stemmed, there is a careful selection of the individual berries to ensure only the perfect ones are used for the production of Avulisi.
Vinification: Once softly crushed the grapes are fermented in special barriques, which are regularly turned throughout the process, in order to mix the skins and the fermenting wine. The wine is allowed to ferment at its natural temperature (which doesnt exceed 22-24°C) for about 15 days. Due to the small volume the fermentation is quite slow and temperature doesnt get too high. Once the fermentation is completed the wine stays in contact with the skins for about eight weeks (determined by tasting). The malolactic fermentation is also done naturally.
After racking the wines ages in the same barriques for at least 12 months and then for a minimum of six months in bottle before being released.
Straw yellow in colour. It has an intense bouquet of tropical and citrus fruits. On the palate it is medium-bodied and perfectly balanced, supple and refreshing. This is a versatile wine, pairing well with a great variety of dishes, or enjoyed on its own as an aperitif.
Grapes: 100% Pinot Grigio. Vineyard area: the vineyards are located in Veneto, in the northeast of Italy.
Harvest: the Pinot Grigio grapes are carefully picked by hand in mid-August, when the grapes are very crisp and have very good acidity.
Vinification: the grapes are destemmed and very gently pressed in a pneumatic press. Prior to fermentation the juice is chilled to allow a natural separation of sediment and juice. After racking, selected yeasts are added to initiate the alcoholic fermentation. Fermentation takes place in temperature controlled conditions of 18°C in stainless steel tanks for approximately 10-15 days.
