About 35 years ago a young german men full of energy and passion arrived to Portugal with the crazy idea to select and to catalog the portuguese wine varieties. He discovered quickly that next to the diversity about 300 different varieties, Portugal owned some very special not known varieties with great potential.
With the arrival of his daughter Dorina Lindemann 20 years ago the foundation for the winery was made.
At the moment, the winery has around 75ha that allow an annual production of about 400.000 liters.
The white grapes are de-stemmed after harvesting and stored in a cold room to avoid premature, uncontrolled fermentation. Constant quality control and taking the utmost care in processing are the most important factors. After the press, the must is pumped directly into stainless steel tanks, located in a cooling chamber. Here, the wine ferments slowly at 12ºC and is monitored constantly. This is followed by the first racking during which the temperature is reduced to –1ºC until the wine has stabilized completely.
At the Quinta da Plansel, red wines are fermented in one of four different ways, depending on the quality grading and individual characteristics of the grapes: Open maceration (wine press type); Mash fermentation with floating cap, mash transfer and irrigation; Horizontal rotary fermenter (Vinimatic) and the Fermentation in barrels.
Because of the subtropical, hot climate, cooling is an essential condition for quality, irrespective of the colour of the grape or type of wine. This is why the Quinta da Plansel has five cooling rooms.
Dorina, a studied and passionate winemaker is nowadays an ambassador for especially 3 varieties from Portugal, with big effort and passion she tries is to single out the special character of these varieties: Touriga Nacional, Tinta Barroca and Touriga Franca.
Today, Dorina and her two daughters, Luísa and Julia, enthusiastically advocate Portuguese wines vinified from the grapes of autochthonous varieties, especially those from the Portugal.
