Terroir Pouilly-Fuissé is the most prestigious appellation in the Mâconnais. Its vineyards lie in suntraps beneath the prehistoric limestone escarpments of Solutré and Vergisson. 'Plénitude de Bonté is comes from vines in the villages of Pouilly and Vergisson that are over 50 years old. The name comes from an old French saying that grapes should be harvested at just the right moment, when they are at their very best - and the grapes that go into 'Plénitude de Bonté' are only the very best! Both parcels have a south-easterly aspect that exposes them to sunlight and warmth these suntraps provide stimulates photosynthesis, and allows Chardonnay to develop physiological ripeness quickly, under stress, in Burgundy's precarious continental climate
It all started in 1928 with Joanny Collovray and the first vines he owned around the village of Davayé, a few kilometers West of Macon, around the Solutré and Vergisson rocks. Two generations later, the Collovrays met the Terriers and joined their forces within the Domaine des Deux Roches who was born in 1986. Today, the fourth generation is at work...
The origins : a vineyard, the Mâconnais and a village, Davayé
The Collovrays and Terriers are set in Davayé, a village located on the borders of the Solutré and Vergisson rocks, near Solutré-Pouilly and Fuissé, a land favorable to the emergence of great wines with character. They are the results of an alchemy between the minerality of these terroirs, the predispositions of a wine and the generosity of the climate.
