Paso Robles is a small valley tucked into the heart of Californias rolling coastal ranges. Its hot summer days and cool nights create a climate similar to Frances Rhône valley. Under the daytime sun, the grapes become plump and full of juice. Then the nighttime air blows in, cools off the vines and allows the grapes to retain their acidity. This 40 to 50 degree diurnal shift in temperature creates grapes that are bold in flavor yet retain a refreshing crispness.
