SAINT M ROSE

ORIGIN: Golfe de Saint-Tropez - Cogolin - France.
AREA: AOC 21 Ha.
SOIL AND EXPOSURE: The soil is mainly clay-limestone and mica-schist origin, southeast exposure.
VARIETIES : GRENACHE, SYRAH, CINSAULT, TIBOUREN, ROLLE, UGNI B, MOURVEDRE, CLAIRETTE, CABERNET, CARIGAN.
VINIFICATION: Harvest of the grapes at phenolic maturity. Crushing and total destemming. Alcoholic fermentation in thermoregulated stainless steel tanks at 16°C for perfect preservation of the aromas.
COMMENTS: Saint M, Available in the 3 colours, this range constitutes the core of the estate’s production. It cultivates a flexible and expressive style. The whites and rosés are distinguished by their tension coated with an elegant full body, the reds by their great finesse and smooth tannins. Its strength stems also from its mixed schistose mica and calcareous soil which gives a fine mineral touch.  A fine, sparkling colour, of a slightly salmoned rosé. An evocative nose, without restraint, with citrus (lemon,
clementine) and floral aromas (wild tulip, poppy). A wine with a fine freshness, full-bodied, rich and round at the same time, with an acidulous and amylic finish.

It cultivates a flexible and expressive style. The whites and rosés are distinguished by their tension coated with an elegant full body, the reds by their great finesse and smooth tannins. Sustained cherry red appearance. Very ample nose of ripe cherries and prunes. In the mouth, a certain firmness upon attack, a powerful style.

A very clear and pale colour, brilliant and clear, with shades of slightly bluish rose. A powerful bouquet, well-bred and flavourful with the aromas of exotic fruits associated with white-fleshed fruits and some mineral notes. On the palate, the flavours are expressed with delicacy and finesse. The grapefruit notes bring freshness, the flavours of red fruits, peach and apricot bring enjoyment and aromatic complexity. An elegant and feminine wine, balanced and structured , full-bodied with finesse, with fruity and refined aromas.

COMMENTS: A special vintage from an exceptional plot. A very clear and pale colour, elegant and crystalline with shades of slightly bluish rose. A subtle, fine and elegant bouquet with the aromas of exotic fruits and some mineral notes. On the palate, the flavours of English sweets and exotic fruits blend with the flavours of white-fleshed fruits. A well-bred and elegant wine, structured and enjoyable, with the delicate flavour s of fruits, grapefruit, peach, apricot, associated with mineral notes.

ALUZE WHITE

CLIMATE: The 2016 wine year began with a dry and mild winter. It was followed by a very rainy and cold spring. These spring conditions created many difficulties for the control of the vine diseases, especially downy mildew, as well as vegetation control. It was, therefore, a year of hard work in the vineyard and it was not easy to reach the stage of maturity with the controlled vine. The summer, however, was very hot and dry. Fortunately, the soil had reserves of spring rains which allowed a very balanced maturation of the grapes.
WINEMAKING: The grapes were harvested in 25 kg boxes and 12 hours in a cold room. They were crushed and partially squeezed in a vertical press. Natural fermentation with native yeasts and stage of wine with fine lees, in barrels of 600 liters (35%) and stainless steel tanks (65%).  It was bottled on April 18, 2017 
GRAPE VARIETY: Rabigato: 50%, Gouveio: 35%, Cerceal: 15%.
TASTING NOTES: Very bright yellow-green color, it has fruity aromas - pears and apricots, vegetables (influence of the old vines) and some floral notes - wildflowers. On the palate, we feel a wine with a well-marked acidity, a lot of minerality and a persistent finish. 
FOOD PARING: Cod fritters, Octopus Galician style, Lobster salad. Serving Temperatures: Best serving between 10º and 12º
TECHNICAL DETAILS : Douro region: DOC.
Soil:Shale. % In volume: 13%. Residual sugar: <2 g/L.

ALUZE RED

CLIMATE: The year 2012 was marked by a lack of rain in the winter, as a result of which the vines starting their growth cycle with a soil water content close to zero. In the spring, temperatures were mild and the rain that fell was not enough to replace the soil water. As a result of these factors, the vegetative development of the vines was generally rather weak and resulted in small berries, which was reflected in lower than normal production. The production of small berries combined with mild temperatures during ripening resulted in fresh and concentrated grapes.
WINEMAKING: The wine harvest took place in September. The grapes were transported in 25-kg
crates to the winery. They were held in cold storage for 12 hours, then de-stemmed, partially crushed and
conducted by gravity to the fermentation tanks. The wine was made in wooden grape pressing vats and stainless steel barrels. The wine aged after 12 months in oak grape pressing vats, followed by 7 months in concrete vats. During the winemaking and ageing process, the wine was moved gently by means of gravity and without the use of pumps.
GRAPE VARIETIES: Touriga Nacional (45%), Touriga Franca (35%), Vinhas Velhas (castas misturadas) (20%).
TASTING NOTES : Ruby coloured and with aromas of vanilla, mint, ripe mango and a little resin. In the mouth it has a fresh attack, with hints of chocolate and black tea. It has a lingering finish and the capacity to evolve in the bottle. Accompaniments Rack of Venison with Chestnuts, Cod Pie, Paella à Valenciana. Serving Temperature: 16-18 Degrees

TASTING NOTES : Clear visual appearance of an intense violet colour. Scents of Mediterranean forest, resin and red fruit aromas, especially blackcurrant and raspberry. Voluminous when entering the mouth, with silky tannins. Many spices may be perceived, especially pepper, with wood very well incorporated. Persistent finish. Vinous, very pure wine.
Accompaniments -
Suggestions: Oven-baked grouper, venison steak with rapini, roasted cod with bacon. Serving Temperature:
16-18 Degrees

PORTO WHITE

WINEMAKING: The grapes of this wine come from a vineyard around 60 years old in the sub-region of Douro Superior. The predominant variety is Rabigato. After manual harvesting into 25-kg crates, the grapes were stored in a cold chamber for 12 hours. Fermentation was performed via maceration of the grapes until addition of the liquor. The wine aged in antique 550-litre oak barrels for 3 years. During aging and until bottling, this wine was not subject to any type of filtration or other treatment.
It was bottled in July 2015.
TASTING NOTES : Colour: Straw. Nose: Expressive with notes of honey and tea. In the Mouth: Offers sweetness accompanied by a pleasant acidity, making it a very covetous wine. It is notable for its lingering finish. Cuisine: May you drunk as an aperitif and/or
dessert wine. For example, goes well with clams à Bolhão Pato, carpaccio of salmon, Apple Tart.
