Winemakers note

A very harmonious combination of varieties. The distinct apricot and mandarin blossom Viognier characters adding sophistication to an already enticing Chardonnay. Sur lie aging, and subtle oak treatments are practiced on individual components. This and the final percentages of each varietals are determined by extensive tastings at every step in the wines maturation.

Fermentation is followed by 10-12 days of maceration, followed by malolactic fermentation. Part of the wine is matured in French oak for 3-4 months.

CHOCOLATE TUBE PRIMITIVO ALBERELLO

Color: Deep Red.
Aroma: A generous fruity aroma with hints of ripe fruits, cherries and chocolate.

Food pairing: This wine goes best with grilled meat, game and cheese. Best served at 18° C.

Production and maturation: The grapes are manually harvested in Puglia during the second decade of September, when the berries are already in a light overripe phase. The reason is to grant the production of a deep red color wine, rich in alcohol with ripe and sweet tannins and notes of cherry liqueur. Vinification takes place in wooden and stainless steel fermenters of small capacity (10-50-100 hl) at controlled temperatures of 25-28 C° with 7-10 days skin contact. After the malolactic
fermentation the wine matures for 6 months in 225 liter barriques made by a special selection of French and American oak and long toasted, so to release notes of white and dark chocolate into the wine. Only light filtration before bottling. May be stored for 3-4 years.

Allegro Rosato is made from organically grown Negroamaro and a small percentage of Malvasia Nera. Negroamaro give the wine its freshness while Malvasia Nera contributes with more aromatic components.

After the malolactic fermentation half of the Cabernet Sauvignon is matured in oak for a period of time to obtain the desired level of oak structure and then blended with the remaining part of the Cabernet Sauvignon. The two varietals are thereafter blended together for the final cuvee of Crudo Nero d´Avola Cabernet Sauvignon.

The must is fermented at a low temperature to maintain the freshness and flavors of the fruit. Finally, the wine has been aged for 6 months in temperature-controlled stainless steel tanks.

Aroma: Generous and complex ripe aromas of Cape gooseberry marmalade and flint.
Taste: Dry fruity flavor of passionfruit, lime, melon and cashew nut with a long mineral finish.
Food pairing: This wine can by enjoyed with seafood, paella or antipasti.

Production and maturation: Harvested in the early morning from selected mountain side slopes in the Stellenbosch and Franschoek areas - both renowned for specializing in these varieties. The grapes are hand sorted and then destemmed before gentle pressing. The Sauvignon Blanc was fermented at cool temperatures in stainless steel tanks to retain freshness while the Semillon was fermented in 225 liter new French oak barrels for 6 weeks to enhance complexity and richness. The wine can be stored for 3-5 years.

ESCAPADES CABERNET SAUVIGNON SHIRAZ MALBEC

Color: Dark ruby red
Aroma: Grand aroma of concentrated fruit and oak, hints of ripe black currants and wild berries with
spicy notes of coffe bean and black berries.
Taste: Full-bodied with a rich game and berry fruit palate, fine tannins and long licorice finish.
Food pairing: A perfect match with any meat dish like beef or lamb and especially game.

Production and maturation: Harvested in the early morning from a selection of hillside and south facing vineyards. Hand-picked grapes from selected Cape vineyards at optimum ripeness (24-25 Balling) and crushed, but not destemmed, to enhance the fresh berry fruit characters. Fermented in stainless steel tanks for 7- 10 days and then a portion taken to barrel for malolactic fermentation,
with the balance being completed in tank. Matured in small French barrels for more than a year before being blended and gently fined.

ESCAPADES PINOTAGE

Color: Deep ruby red
Aroma: Rich aromas of boysenberry and rooibos gently supported with vanilla oak notes.
Taste: Full-bodied with smooth concentrated flavors of ripe fruit like cherries, plums and dark chocolate with a soft palate and a long berry fruit finish.
Food pairing: Perfect to accompany any meat dish like lamb, veal but especially game.

Production and maturation: The grapes have been manually harvested for this Pinotage, selected from premium Cape vineyards. Harvested in the early morning at optimum ripeness and destemmed, not crushed, to enhance fresh berry characters. Fermented for 5 days on skins at 23-25°C and then pressed before dryness to maintain soft tannins. Malolactic fermentation in stainless steel tanks and then matured for almost a year in small French barrels to further aid in the development of structure and soften the tannins.
