Lothian Vineyards Pinot Noir

This 100% Pinot Noir bursts with violets, black cherry and star anise. Succulent on the palate, there is a core of fruit underpinned by lively acidity wrapped in flavours of black plum, raspberry and some savoury elements with soothing tannins. Would pair well with gammon, country paté or a porcini on ciabatta.

Lothian Vineyards Chardonnay

Made by Richard Kershaw MW
Made from 100% Chardonnay, the nose exudes ripe stone fruit, lemon zest and pineapple slices. Clean, refreshing acidity supports the ripe yellow-profile fruit, complexed by vanilla bean spice and an oatmeal texture. Would pair with roast chicken, mushroom risotto or a slice of Camembert.

Lothian Vineyards Riesling

This dry Riesling shows lime zest, camomile and lemon blossom. A crisp green apple acidity keeps the wine tight and linear in focus with fruits leaning towards Kiwi sorbet, Galia melon and the purity of an Alpine forest. Pairs well with Thai-inspired dishes, pan-fried yellowtail or a chunk of old Gouda.

Lothian Vineyards Isobel Mourvedre Rosé

Made from 100% Mourvèdre, this dry Rosé displays lifted aromas of strawberry, pomegranate and redcurrants. Bracing acidity, white pepper and lively red berries that would pair well with charcuterie and roast meats.
The Lothian Mourvedre Rosé was picked in separate pickings 10 days apart. The 1st was on 24th March and the last on 1st April 2016. The autumnal equinox took place on the 20th March. The days rapidly grow shorter and most white cultivars start to show yellow leaves. This Mourvedre (a late ripening cultivar) is planted specifically for Rosé and this style is what it is best suited for in Elgin, as it would be difficult to achieve the ripeness needed for a full bodied red.The necessity for two pickings arose from the fact that the block had been grown with two different trellising systems. One was the usual Vertical shoot positioning system and the other a Smart Dyson. The Smart-Dyson with its more open canopies ripened the grapes earlier, had bigger looser and better-coloured berries. Grapes were handpicked into small lug boxes and delivered to the cellar where they were hand fed into the press for whole bunch pressing. The degree of ripeness and the gentleness of the whole-bunch pressing programme, allowed all the juice to be used without fear of excessive colour pick up. The analysis of the juice at the cellar was 21.6B, pH 3.42, TA 5.88. The juice was inoculated with Lalvin Gre and fermented between 140C and 180C. The wine was kept on its gross lees for about 3 months with stirring when needed. Just before bottling the wine was racked, protein stabilised with bentonite, crossflow filtered and bottled with the same dryness at which it finished the ferment.
