Vinification: Soft pressing, fermentation in stainless steel tanks with temperature control of 14 degrees C

Maturing and aging: stainless steeltanks and in bottles.

Tasting notes: A pleasant yellow colour with green reflections, an intense bouquet of yellow and ripe fruits, fresh, it accompanies fish based starte/rs, first courses and main courses.

Grapes: 100% Bombino

Grapes Origin: San Paolo di Civitate on hills of 200 m

Vineyard: Vineyard with espalier trees and northeastern orientation

Yield: up to 130 quintals per hectare (13 tons)

Harvest period: First half of September

Vinification: Soft pressing with pneumatic presses, settling of the must, fermentation with controlled temperature (15-17 ° C) and selected yeasts. Aging on the stainles steel tanks for three months.

Secondary fermentation: Charmat in stainless steel pressure tanks, with frequent agitation in order to facilitate the transfer of the yeasts’ noble substances.

Second fermentation temperature 15 ° C.

Duration of second fermentation: about 50 days,Alcohol 11.5% vol.

Tasting notes
Pale yellow with greenish reflections, reveals a delicate hint of crisp citrus notes and exotic fruit aromas. Fine and persistent bubbles with a fresh and balanced palate.

Vinification: 20 days prolonged maceration of the wine on its skins in stainless steel tanks

Maturing and aging: in French oak, stainless steel tanks and in bottles.

Tasting notes: with an intense ruby red color and a bouquet of red and delicate fruits, of velvety flavor, moderately tannic, with a caramelized and spiced finish that are exalted with complex and prolonged sensations. It is accompanied with baked, grilled or cooked in its own juice red meats.

About us

Company details

Our vineyards, all owned and located in Capitanata, in northern Pulglia, extending of 165 hectares in five districts:  Predicatella, Ricci, Zecchino, Coppa Castello and Il Vignale. The farming system is both tendone and bilateral Guyot with drip irrigation system.

We produce different types of grapes. Among the red we cultivate are: Nero di Troia, Negroamaro, Primitivo, Aglianico, Montepulciano, Sangiovese, Syrah, Merlot, Cabernet Sauvignon; among white Trebbiano, Malvasia, Bombino, Falanghina, Chardonnay, Fiano.
