The winery is located in the town of San Severo, on county road 30 that connects San Severo to Torremaggiore.

The vineyard stands on one of the plots owned by the family.  The location was chosen because San Severo had the best conditions for the construction of the vineyard and for  its proximity to villages and roads.   The 9000 square meter property is modern with a building of 1000 square meters divided into two floors.

The ground floor is mainly used for winemaking, bottling, and administrative offices. A 200 square meter loft area overlooking the winery is used as a tasting room.

In the north part of the cellar, there is an island with hot exhaust for crushing the grapes, the stem crusher, a soft presser and the heat exchanger to bring down the temperature of the crushed grapes.
The main part of the winery holds insulated stainless steel storage containers for fermenting at controlled temperatures using a massive wine cellar cooling unit.

The space before the main area is used for bottling and packaging. There is also a laboratory for enological analysis to monitor all stages of production at the winery. A separate entrance leads to the shop where customers can buy our products.

The 500 square meter basement is divided into three rooms. It houses the cellar for the aging of quality red wines in barriques made from French oak and wooden casks of 400 and 500 liters made from wood from different parts of France. There is also a storage area for bottles and a warehouse space for packaging.

From light pressing to cold maceration, from controlled temperature storage to the nitrogen and carbon dioxide distribution system for preserving the wine in containers and bottles, from microfiltration to absolute adherence to rigorous standards of hygiene and maintenance, and by using the latest technology for this purpose, Cantina Ariano offers proof of high quality and standardization of its products.
