Ribolla Gialla

This autochthonous variety of vine with white berry is known already since 1300.

The name derives from the Slovene “Rebula”, which in the Friulian dialect has become “Ribuele”. At the begging of the last century, during the Austria-Hungarian Empire, the sweet filtrates of this wine were very appreciated and esteemed, especially in the leisure classes.

Ribolla owes almost certainly its name to the high content of malic acidity, which in the past brought the wine to “ferment” (“ribollire” in Italian) in the demijohns.

GRAPES: 100% Ribolla Gialla
VINIFICATION: white wine making with soft pressing and fermentation at controlled temperature
TRAINING SYSTEM: guyot, cappuccina
COLOUR: light straw yellow with light greenish reflections
FRAGRANCE: resh notes of wild flowers and ripe fruit as the apple
TASTE: this dry wine has got a great taste. It is fresh, lively and it is composed by a good acidity and mineral taste
MATCHES WITH FOODS: it is fit for an aperitif and it pairs well with cold fish starters, particularly with molluscs, soups and crème soups, or with batter-fried vegetables
SERVE AT: 10-12 °C

This international variety of vine with black berry was introduced in Italy at the end of 1800.

In Friuli Venezia Giulia it has certainly found its land of election: it is the fixed point of the Friulian oenology and it is the most widespread variety of vine with black berry in this region, even if it is not autochthonous.

GRAPES: 100% merlot.
VINIFICATION: maceration on the skins for 5 days, fermentation at controlled temperature. Soft pressing
COLOUR: load ruby red, intense and lively. If it is aged, it tends to garnet red
FRAGRANCE: characteristic, intense, winy, with floral notes which reminds black cherry, raspberry and blueberry. When it ages, the bouquet enhances with spicy notes
TASTE: structured, savoury and easy at the same time, easy drinking and fluid. When it ages it refines acquiring complexity
MATCHES WITH FOODS: all along it is the red wine of Friuli, in fact it is classic to drink it in the traditional Friulian taverns asking for “un Tajut di rosso” (a glass of red wine). It is recommended for the whole meal, especially for people who like red wine. Furthermore it is ideal with second courses of meat, roast and poultry
SERVE AT: Serve at about 18° C

Moscato Giallo Sparkling Wine

Franconia is a “gamble in a pink dress” to the oenology. The sparkling process takes place according to the Charmat process in steel autoclaves. The second fermentation (“prise de mousse”) lasts 60 days obtaining a dry sparkling wine with a sugar residue of 20 g/L.

GRAPES: 100% Franconia.
VINIFICATION: brief Charmat process.
TRAINING SYSTEM: guyot, cappuccina
COLOUR: rose coloured. Fine and persistent perlage
FRAGRANCE: delicate floral notes remind the rose and are intertwined to fruity notes as cherry and prune. They blend in order to give an extraordinary bouquet.
TASTE: to the palate it is soft and at the same time dry thanks to a lively acidity. It is fruity and it has got a persistent aroma. It remind fruits as raspberry and currant.
MATCHES WITH FOODS: it is ideal with cold cuts and it is great as aperitif. For the people who like sparkling wine it is a wine for the whole meal.
SERVE AT: 4-5° C

Company details

The company Scarbolo is located south of the municipality of Cividale del Friuli, in a place called Spessa, area of outstanding wine vocation where the vineyards cover the hills and dominate the landscape.

The soil composition of marl and sandstone, south-east exposure of vineyards, and the rolling hills of the eastern hills of Eocene origin, allow you to obtain top quality grapes.

Steel tanks and very thick walls guarantee a constant temperature, limiting temperature changes between summer and winter, being oriented to East.

The technology is one of the more specialized, but without forgetting the tradition, handed down from generation to generation since 1928.
