Barolo D.O.C.G. Sotto il Castello

Growing location
The vineyard lies in the village of Novello, on the highly-prized “sotto castello” (below the castle) cru facing south, south-east at an average altitude of 400 m asl. The fairly deep limestone soil has medium consistency with good drainage. The vines are planted with a density of 4,500 per hectare, and are trained on vertical trellises and pruned using the Guyot system.

Year of planting: 1999 e 2002

Wine-making process
Vinification on the skins, with a submerged cap and daily pumping over of the must. The maceration is extended for several days following the alcoholic fermentation by steeping the cap in order to increase the extraction and stabilize the colour extracted; after the wine has been drawn off and racked several times, it undergoes malolactic fermentation in steel before being transferred to oak by the end of the year to mature for at least two years prior to bottling, which takes place a year before the wine is released.

Tasting notes
Deep, bright ruby red with slight orange hues; expansive, clear-cut nose, with hints of violet, vanilla, cinnamon, sweet tobacco and liquorice; very structured, soft mouth-filling taste, which is lightly dry with an appealing, long, spicy finish. Its structure and wealth of polyphenols give this wine an exceptionally long cellar life, during which its tasting properties continue to develop.

Dolcetto Alba D.o.c.

Dolcetto d’Alba

Growing location: vineyards facing west in the village of Monforte d’Alba at an altitude of around 400 m, on loamy-clayey soil containing plenty of lime. The vines are planted at a density of 4100 per hectare, and are trained using the Guyot system.
Year of planting: 1982

Wine-making process: fermentation on the skins, with a submerged cap and daily pumping over of the must; drawing off after 5 days, and completion of the fermentation off the skins to enhance the wine’s softness; after the malolactic fermentation the wine stays in stainless steel until the following spring, when it is bottled for release in June. This wine’s appeal and elegance make it perfect for serving through a meal.

Tasting notes: very intense garnet red, with distinct purplish highlights; clean, expansive nose with clear fruity overtones of cherry, red currant and blackberry; smooth, round, full-bodied taste, with a long, highly appealing fruity finish.

Barbera d'Alba D.O.C.

Growing location
The vineyard faces south-south west in the village of Monforte d’Alba, with vines trained on vertical trellises and pruned using the Guyot system. The particularly sun-blessed location and well-drained, marly soil bring out the very best in the barbera grapes grown on this vineyard.

Year of planting: 1982

Wine-making process
On the skins, with a submerged cap and daily pumping over of the must; continuation of the maceration for 10-15 days after the alcoholic fermentation; the drawing off and first rackings are followed by the malolactic fermentation and subsequent maturing in French oak for a year; several months of ageing in the bottle finally prepare the wine for its release.

Tasting notes
Very intense, vivid garnet red, with slight purplish highlights; clean, expansive, intense nose, with hints of chocolate, cocoa, roses and sweet tobacco; full, round and very well-balanced on the mouth, with a long, spicy finish.

Company details

Cantina Le Ginestre stands on the road that winds its way up from the village of Gallo Grinzane towards Diano d’Alba, just where Grinzane Cavour Castle suddenly comes into view on top of the hill. The entire production cycle - from the fermentation of the grapes to the bottling of the wines - is carried out here.

The building is on two floors: the wine-making and bottling plant is to be found on the floor above ground level, while the ageing takes place in casks, barrels and bottles in the basement.

The wine-making process benefits from modern technology: a horizontal plenum press is used to gently drain off free-run juice, and vertical heat-conditioned stainless steel fermenters fitted with automatic sprayers are used in the making of the red wines, while the white wine grapes are fermented at low temperatures in heat-conditioned pressure tanks.

The wines not requiring ageing are stored in stainless steel tanks, while those with more structure - Barolo, Nebbiolo, and Barbera - are matured in casks made of Slavonian oak and smaller tonneaux and barriques made of French oak.

The bottles are stored in the coolest, darkest part of the cellar.
