VIÑAS DEL CÁMBRICO 2014

Vineyard
This wine has two of our red grapes from three different vineyards. The vines are planted in sandy soils of decomposed granite. The altitude varies from 700 to 800 meters above sea level.
The vineyards are planted on terraced hillsides and the planting density is 1,50 m x 1,50 m
ORGANICALLY FARMED.

Production

Bunches are sorted and harvested into 10 kg crates
Grapes are destemmed and carefully sorted on the sorting table.
Grapes are the transferred via gravity into stainless steel tanks.
Native yeast fermentation
Gentle mixing via gravity and occasional punch-downs
Naturally malolactic fermentation in stainless steel tanks
6 months in French oak barrels of 300 liters.

Vintage
Spring 2014 brought enough rain for the vines to resist a very dry summer. It was also especially cold, in August there were nights where the temperatures dropped to 8 ° C and during the daytime, except in the last week, they did not exceed 30 ° C. For Cambrico the  vintage  was exceptional, we got grapes with optimal levels of sugar, acidity and phenolic maturation. In the week of September 18th a storm discharged 200 l per m2; luckily we had already collected 90% of our grapes.

575 Uvas de Cámbrico 2013

Vineyard
This wine has our three red varieties.  Rufetes and tempranillos from old vines from our plot “La Mata de Francia” at 700 m and Calabrés we planted in our plot “ Pocito” (800 m) in 2002.  Both are granitic soils, although in “Pocito” we find quite a lot of quartz.
The vineyards in both cases are terraced with a planting density of 1.5m x 1.5m
ORGANICALLY FARMED

Production
Manually sorted and harvested into 10 kg picking crates.
Destemmed and rigorously sorted on the sorting tables.
Fermentation and native yeast ferment.
Manual punching down and mixing via gravity
French oak barrels of  300 liters  for 12 months.

Vintage
In 2013 thanks a dry end of spring and a summer with only a few storms the vines remained very healthy.  The month of July was very hot but the first three weeks of August were fresh so that the grapes ripened slowly keeping a good acidity. At the end of August a sudden heat wave forced us to harvest quickly, which spared us the heavy rains in mid-September. The result is a very aromatic wine, slightly more structured and complex than in 2012 but keeping the fruit and elegance of the previous harvest.

*El Calabrés is a particular clone of  Garnacha grown for centuries in the Sierra de Salamanca and which we could recuperate

CÁMBRICO TEMPRANILLO 2009

Vineyard
In the Natural Park of the Sierra de Francia, south of the province of Salamanca, is cultivated since time inmemorial Tempranillo, known in the region as “Aragon”.
Viñas del Cámbrico has recovered a 100 year old vineyard located in the granitic terraces of “El Pocito”, 800 m altitude, in order to produce a tiny amount of this particular tempranillo, complex, spicy, expressive, elegant and silky.
The vineyards are terraced with a planting density of 1.4m x 1.4m.
ORGANICALLY FARMED
Production
Due to the age of the vines the yield per plant is just 500 g.
Manually sorted and harvested into 10 kg picking crates.
Destemmed and rigorously sorted on the sorting tables.
Fermentation  with native  yeast  ferment.
Manual punching down and mixing via gravity
Malolactic and aging in French oak barrels of 300 and 500 liters for 26 months.
Vintage
In 2009 the summer was hot but the last weeks of August had very fresh nights so that the grapes kept a good acidity.  The result is a very aromatic wine, slightly structured, with aromas of mature and also red fruits, very mineral and complex.

CÁMBRICO RUFETE 2010

Vineyard
Cámbrico Rufete 2010 is made with grapes from two plots “El Pocito” and “Valleoscuro”  both at  800-900 m. El Pocito has granitic soils with quite a lot of quartz while at Valleoscuro the vines grow on slate rocks.  
The vineyards in both cases are terraced with a planting density of 1.5m x 1.5m

About us

Company details

At a Height of 800-900 meters in the heart of the national park and European Biosphere Reserve Sierra de Francia in Salamanca, we have the ideal conditions to obtain grapes of extraordinary quality. Here Vineyards have been cultivated since Roman times.

In the 20th century many vineyards slowly were abandoned owing to the inability to mechanize vineyard work on the terraced slopes. Starting in 2000 in Cámbrico we have recuperated the old vineyards with native varietal - Rufete, Aragonés (Tempranillo) and Calabrés - and adapted the parcels to organic viticulture.

The best vineyards are on escarped slopes and soil of granite and slate that were formed during the Cambrian Age (about 500 million years ago). We only work with native varietals that have always been grown here, and we tend to our vineyards in an ecologically respectful manner. Only this can confidently offer the purest expression of our land which gives us truly original and authentic wines.
