Ripasso Valpolicella Doc Classico Superiore

Region:  Valpolicella, Verona, Veneto.

Vineyards:  Selected hillside wineyards, at 200 and 250 mt, in heart of Valpolicella Classica, planted in calcareous soils.

Grapes :  Corvina Veronese and Corvinone Veronese 80%, Rondinella 15%, Oseleta 5%. Bunches are hand picked.

Vinification: Valpolicella Classico Superiore, made with the traditional technique of “Ripasso”. Fermentation and maceration for 10 days. Decanting for 90 days. Subsequent fermentation on the skins of Amarone.

Aging:  The wine is refined in big oak barrels for 1 years, then it is finally refined in bottle for 4 months.

Tasting Notes:  Intense ruby red colour. Spicy bouquet with intense aromas of ripe cherry and jam. Dry, full soft flavour in the mouth, with a very pleasant bitter finish.

Analysis:  alcohol 13,5% Vol. Total Acidity 5,7g/l. Residual Sugar 6,6g/l.

Food Pairings: Perfect with pasta dishes, meat game and cheeses. Ideal with traditional “risotto”. Recommended drinking temperature 17-18 °C. 

Bottle:  Bordolese Arno 600 gr. Antique glass. cl 75. Box of 6.  Bottles horizontally.

Amarone della Valpolicella Docg Classico

Region:  Valpolicella, Verona, Veneto.

Vineyards:  Selected hillside wineyards, at 200 and 250 mt, in heart of Valpolicella Classica, planted in calcareous soils.   

Grapes:  Corvina Veronese and Corvinone Veronese 80%, Rondinella 15%, Oseleta 5%. Bunches are hand picked.  

Drying Process:  Traditional natural drying of the grapes starting at the end of september for 90-100 days with a natural loose of 35-40% of the weight.

Vinification: Soft pressing of the grapes in December/January, followed by a 30-days maceration on the skins.

Ageing:  70% of the wine is refined for 24 months in big oak barrels and 30% of the wine is refined for 24 months in new French barriques in barriques from Allier oak, then 12 months in the bottle.

Tasting Notes:  Intense ruby red colour with violet edge. Warm, spicy, powerful bouquet with intense aromas of cherry, bitter almond and vanilla. Full, rich, velvety flavour.

Analysis:  Alcohol  15,0% Vol. Total Acidity totale 5,9 g/l. Residual Sugar 7,2 g/l. Dry Extract 33 g/l.

Food suggestions: Traditionally served with game, braised, meats and fully matured cheeses. Generally considered a wine for meditation, it is great after-dinner. Recommended drinking temperature 17-18 °C.

Amarone della Valpolicella Docg Classico Riserva

Region : Valpolicella, Verona, Veneto.

Vineyard : First selection’s grapes picked in the vineyard "Canova", between 200 and 250 meters above sea level, located in the Valpolicella area. Calcareous soil. Fully exposed to the south.

Grapes : Corvina Veronese 40%, Corvinone Veronese 40%, Rondinella 15%, Croatina 5%. Manual harvest and selection at the beginning of September.

Drying Process : Withering from mid-September for about 120 days, with natural weight decline of 35-40%. Scrupulous care and control of the integrity and health of the bunch in the drying loft.

Vinification : Soft pressing of the grapes in the period between December and January. Temperature-controlled fermentation and maceration for 30 days.

Aging : the wine obtained by pressing ages in Tonneau for 36 months in 500 liter Allier oak. Further evolution with aging for 12 months in bottle.

Tasting Notes : Deep ruby red color with garnet grains. Ethereal scent, vanilla, spicy, with hints of cherry, bitter almond and vanilla. The flavor is full, warm and velvety.

Analysis : Alcol 15,7% Vol. Total Acidity 5,9 g/l. Residual sugar 7,2 g/l. Net dry extract 35 g/l.

Food pairings : Traditionally paired with venison. Perfect wine with meat dishes, braised meats, game and mature cheeses. It should be opened one hour before meals. Serve at room temperature of 17-18 ° C.

Bottle : Ancient glass Bordolese Spalla Alta “Anni 50” cl 75 700 gr. In a six bottle wooden box; horizzontally positioned.
