AMALUNA Spumante extra dry

GRAPES: White Spumante out of black Negroamaro grapes; Charmat Method.

TYPE: Vino Spumante Extra Dry

VINIFICATION NOTES: Wine obtained from Negroamaro grapes harvested in the last week of August in order to maintain their fruitiness.

In the winery, the grapes are softly destemmed and the obtained  must undergoes a static clarification, and then some selected yeasts are inoculated. The alcoholic fermentation takes place in steel tanks at a controlled temperature of 13°C (for approx. 40 days). Then, the sparkling wine is cooled at 4°C to allow the precipitation of extra tartaric salts. Two or three days later it is bottled through isobaric filling process.

TASTING NOTES: Brilliant straw yellow color, with a creamy mousse, and a fine and delicate perlage. The nose is dominated by floral and fruity aromas, especially white peach, banana and pineapple, kiwi and lime zest. On the palate it is soft, full and well balanced, dry at the same time, with a lovely acidity and a mineral taste.

Serve at 6/8 ° C.


FOOD PAIRING: Appreciated as aperitif and perfect with fresh and marbled cheese, first and second courses based on fish, and desserts.

TASTING NOTES: delicate perfume, fresh and fragrant scents with a little red fruits bouquet. It also smells flowery, with a nice pleasantness. In the mouth it is delicate, smooth and well balanced, with beautiful freshness and fluidity.



SERVING SUGGESTIONS: it appears to be much appreciated as aperitif, it perfectly matches with vegetable dishes, seafood light starters.

GRAPES = Negroamaro and Malvasia Nera.
VINIFICATION = Few wines only convey with the quality, diversity, and rich winemaking heritage more accurately than our acclaimed Selvarossa range, our real flagship.This wine is obtained from Negroamaro and Malvasia Nera grapes hand-picked the third week of September and individually vinified at their pick of ripeness. Maceration on the skins lasts for 14 days in horizontal rotary fermenters. The wine is then racked into French oak barriques where it matures for 9 months. After completing the malolactic fermentation, the wine decants in stainless steel vats prior to bottling.
TASTING NOTES = Intense and brilliant ruby red colour. The opening of this wine is characterized by aromas of black cherry, plum and blackberry, as well as complex aromas of vanilla, tobacco, licorice, clover, cinnamon and a pleasing hint of star anise. It gives the mouth a robust attack, with vigorous tannins, although already round and velvety, also balanced by alcohol.

GRAPES = Susumaniello.
VINIFICATION = Susumaniello is an ancient autochthonous Apulian vine, probably with Dalmatian origins. This strange name takes its meaning from the fact that its vines, above all in the first ten years, procuce an exceptional quantity of bunches of grapes: “burdened like a donkey”. The grapes are very rich in sugar and antociani, and have a good percentage of total acidity. They are hand-picked in the second week of September and fermented into horizontal rotating tanks. Maceration on the skins lasts for 14 days. The wine is then racked into French oak barriques where it matures for 6 months. after completing malolactic fermentarion, the wine decants in stainless steel vats prior to bottling.
TASTING NOTES = Deep ruby red colour with blue highlights and a bouquet of ripe red berries and blackberry jam. On the palate is full bodied with a powerful structure.

VINIFICATION Wine obtained from Primitivo di Manduria grapes, hand-picked late in the harvest and gently pressed. Maceration on the skins lasts for 14 days. The wine is then racked into American oak barriques where it matures for 6 months. After fully carrying out the
malolactic fermentation, the wine decants in stainless steel vats prior to bottling.
TASTING NOTES Deep and dark ruby red colour with purple highlights. Fruity aromas and flowery notes explode on the nose. Smooth and balanced with a well structured and complex finish.

GRAPES = Negroamaro.
VINIFICATION = Negroamaro is an ancient autochthonous Apulian vine which origins are uncertain - although it is believed it was introduced by Greeks. Also the origin of the name is not clear; some believe that it comes from the dialectal expression “niuru maru” (black and bitter) because of the dark colour of its berries and the basically bitter taste of the wine. Grapes harvested in the second decade of September and macerated into stainless steel tanks at controlled temperature with selected yeasts, for 8 days. The wine is then racked into French oak barriques where it matures for 4 months. After completing the malolactic fermentation, the wine decants in stainless steel vats prior to bottling.
TASTING NOTES = Medium ruby red colour; aromas of plum, dried herb and cooked black fruit; dry, medium bodied, sof tannins, juicy red fruit flavors. This is a very easy drinking and versatile wine

Cantine Due Palme is a large cooperative cellar based in Cellino San Marco / Salento, deep in the heart of Apulia, the southerly heel of the Italian peninsula. Founded in 1989 from an idea of its President Mr. Angelo Maci, Cantine Due Palme has grown over the years up to 400 growers – carefully selected on the grounds of their owning old vines situated in premium sites – and it is recognized today as one of the finest large-scaled cellars operating in the region.

With over 2400 Ha of total vineyard holdings disseminated across the region’s foremost appellations, Cantine Due Palme offers a comprehensive lineup of classic Apulian wines made from native varietals, as well as a consistent quality level vintage after vintage.

Angelo Maci, a graduated agronomist at its third generation of winemakers, supervises the vineyard management at all stages throughout the growing season, up until harvest time, following closely each grower and monitoring the ripening of the grapes through weekly inspections.

Since the 90’s, the Cooperative has made substantial investments to increase production and improving quality, focusing on new technologies and development.

In the last twenty years, Cantine Due Palme has incorporated several significant wineries: Cantina Sociale Riforma Fondiaria in Cellino San Marco, one of the oldest Apulian cooperatives, founded in 1955; Cantina Sociale “Angelini” in San Pietro Vernotico, founded in 1961 and finally Cantina Sociale “San Gaetano” in Lizzano, founded in 1959, a great producer of Primitivo DOP Manduria.

Today Cantine Due Palme heads a portfolio of 25 labels, considered as the best wines in the Salento peninsula of Puglia, where the grapes benefit from the arid, rocky soils and warm winds from the Ionian and Adriatic Seas. The result is small knotted bunches of highly concentrated grapes with dense spicy flavour.
