L'Esprit de Pennautier

AOC Cabardès "Grand Vin" - ROUGE

Grapes varieties : Blend of 60% Syrah old vnes and 40% Merlot. Blending can change for every vintage depending on the climate of the year.

Vinification : Carefully selected hand picked grapes. Long maceration (25-30 days) with smooth extraction. Malolactique fermentation in new barrels. Keeping in barrel for 12 to 18 months with removing every 3 month. Wine is not filtered or clarified before bottling.

Ageing : 12 to 18 months in French oak barrel.

Tasting notes: Powerful intricate nose with black fruits, truffle, coriander, and a touch of pepper. Full-bodied, with light tannins and woody aromas. Ready to drink at around 10 years

Food Matching: Game, venison, duck “magrets” and hard cheeses.

Marquis de Pennautier, "Terroirs d'Altitude"

Chardonnay, IGP Pays d'Oc - BLANC

Grape varieties: Chardonnay 100%

Vinification: The fruit is harvested in the early hours of the day, drained and immediately squeezed. Cold settling.
Fermentation lasting 3 weeks at 16 to 18°C.  Fermentation of lees in barrel with lees stirring.

Ageing: matures for 10 months in a new French oak barrel with lees stirring for 50% and 50% in tank.

Tasting notes: Yellow, golden colour. Powerful aromas, including hints of pineapple, vanilla and fresh exotic fruit.
Fresh and well-balanced.

Food pairing: White meats, poultry, fish in sauce, “foie gras”, and as an aperitif.

Château de Pennautier

AOC Cabardès - ROUGE

Grape varieties: Cabernet Franc 10%, Cabernet Sauvignon 20%, Merlot 20%, Malbec 10%, Syrah 20%, Grenache 20%.

Vinification : De-stemming prior to vinification in separate cuves for each grape variety. 25 to 30 days cuvaison on the skins to extract maximum fruit flavours. The blend is decided after vinification.

Ageing : In stainless steel tank.

Tasting notes: Dark red-purple colour, almost black in its youth. A very pure flavour of ripe red & black fruits (cherries, blackberries, mulberries…). On the palate, there is an intense fruitiness which is enhanced by a tannic structure, typical of the bordelais grape varieties. The wine is intended to be drunk in its youth, but can age over 3 to 4 years.

Food Matching: Grilled meats, Daube de canard, cassoulet, arbecues, poultry, hard cheeses.
