Vinification and refinement

This wine is produced with Vermentino grapes grown in the low-yielding vineyard of the Tenuta Santa Lucia on coastal Tuscany, near Pisa and the Mediterranean coast. Vermentino is one of the few white grapes that perfectly acclimated to the Mediterranean Tuscany. It loves sea breezes and sunlight and in return provides opulent flavour and radiant freshness. At the arrival to the cellar, the healthy grapes are de-stemmed and softly crushed. By pressing, we obtain different fractions of juice, each of which is cooled to 8 degrees for 24 hours in order to favour the natural decantation. The clear must is then poured into stainless steel tanks where the alcoholic fermentation takes place at a temperature not exceeding 12°C. About a month after the fermentation, an accurate assessment of the different lots of wine obtained is made to assemble the selected ones to make the final blend.

Colour: Straw yellow color with light golden hues.
Bouquet: Complex with floral notes and hints of peaches, flowers, sage and rosemary.
Taste: Persistent, full and well balanced by the mineral notes.

Food pairings

Ideal with chicken salad, fish courses and appetizers. Serve at 10°C.

Vinification and refinement

The our wine "Toscano" is a beautiful blend of Sangiovese and Ciliegiolo grapes grown in the low-yielding organic vineyard of the Tenuta Santa Lucia on coastal Tuscany, near Pisa. It is fermented for 10 days in stainless steel tanks and further refined for 4 months before being bottled in the new HELIX™ bottle

Colour: Bright ruby red colour.
Bouquet: Very fresh and fruity at nose, with lots of cherry notes.
Taste: Fairly intense with sweet cherry flavours.

Curiosity

The novelty of the "Toscano" is in the packaging that uses an original and innovative solution "twist to open" which is called HELIX™, a perfect combination between a special ergonomically designed cork and a glass bottle with an internal thread placed in the neck of the bottle that allows the manual opening, without effort, with a simple and easy rotation movement. Also, after opening, the bottle can be resealed in the same way, getting a perfect closing to preserve the organoleptic characteristics of the wine. We chose HELIX™ because it represents the ideal solution for an organic wine bottling, focusing on sustainability and reduction of energy and CO². We want to offer our clients a solution of uncorking to which they are accustomed, the screw cap, with the particularity of the realization in cork which refers to the tradition of Tuscan wine. We firmly believe that in addition to the quality of the product, the packaging is also a strong element of competitiveness, of distinction and recognition on the market.

Estate

The vineyard of Santa Lucia Estate is located about 100m above sea level at the intersection of the Arno and the Era Valleys on ancient downspouts land consisting of layers of tufaceous sands and gravel; a land which reveals at times the meeting between the river and the sea, which is now located about 25 kilometers to the west, also rich in stone and fossil shells. The climate is typically Mediterranean with warm breezes coming from the sea during the day and at night channeled by the Arno and Era valleys that provide an excellent ventilation and protect the vineyard from the risk of heat waves determined by recent climate change. The vineyard is completely surrounded by woods, which sometimes it is intertwined into. This osmotic exchange with the native varieties of Mediterranean maquis allows an interesting occasional aromatic exchange and a greater richness of the interaction between the vineyard and the local wildlife . The Castellani Family has acquired this vineyard in 2013 with the aim of experimenting the growing of Ciliegiolo grape, very present variety within the estate .Ciliegiolo is a typical variety of Chianti and in particular of the Tuscan coast, where in recent years has collected more and more support from producers willing to give an original contribution to the Tuscan tradition. Ciliegiolo can produce wines with good structure and in some cases even power, without sacrificing the elegance and intensity of fruit.

Vinification and refinement

This wine is produced from Ciliegiolo (cee-lee-a-jo-low aka “cherrygrape”) grapes grown in the low-yielding organic vineyard of the Tenuta Santa Lucia on coastal Tuscany near Pisa. Following the old traditional vinification method, completely mature grapes are harvested from vineyards and crushed almost immediately. Afterwards the grapes are poured in large inox tanks for fermentation. The primary fermentation evolves at a controlled temperature for approx. 15 days. When the primary fermentation is perfect, the wine is filtered and stored at constant temperature in oak barrels for a minimum period of 12 months, in order to obtain warmer tones and colours.

Bouquet: Rich spicy perfumes and black pepper notes with a hint of raisins.
Taste: Full body balanced taste, very intense and spicy with sweet cherry flavours.

Toscana IGT - Fattoria di Travalda

Vinification and refinement

The grapes are hand-picked and selected in crates. They are successively vinified blending all the different varietals in stainless steel tanks at controlled temperature. Follows the maceration with the skins for 20 days and delestage every three days. The malolactic fermentation takes place in barrique by 225 Lt first passage where the wine is poured twice. After a permanence of minimum 18 months in barrique, the wine is bottled with no filtration. The our wine "Fattoria di Travalda" is not clarified and requires a certain period of refining in bottle.

Bouquet: Extraordinary floral components with intense notes of geranium and jasmine, red berries, toasted coffee, cinnamon and spices.

Estate

In the ancient Travalda estate, name dating back to Roman times, is located the headquarter of the Castellani winery and the vineyard of homonymous “Bordelaise blend”. The estate is located in the Arno valley a few miles from the coast in the town of Pontedera, expanding logistic area, and for this reason chosen in the seventies to build the bottling winery where the offices and logistics warehouse are located. Within the estate is the “casa degli archi”, rural nineteenth-century structure that houses the aging cellars of red wines produced from grapes grown in the adjacent five hectares of vineyard. The decision to dedicate the vineyard to the cultivation of Bordeaux grape varieties comes from the desire to continue the tradition of the Tuscan coast who sees in Cabernet Sauvignon and Merlot the main vines of the great coastal "Super Tuscans". The vineyard is conducted under biological system.

Vinification and refinement

This great classic is born from a selection of the best Sangiovese and Canaiolo organic grapes from Poggio al Casone vineyard. Special rolling presses are used to give a soft treatment to the grapes that are fermented following the traditional methods in temperature-controlled tanks. After the fermentation the wine is filtered and sent to its refinement in casks located in thermo-humidified cellars where it remains for at least 12 months.

The location of the vineyard at the confluence of the Arno valley and the plains overlooking the sea, is one of the elements that makes the area particularly vocated to the production of quality wines, thanks to the deep and draining soils, sea breezes and intense brightness. The entire vineyard has been subject of repeated renovations in the 60s by engineer Sarti, inventor of the Vespa engine, and then by the Castellani Family who, since 1995 - year of the acquisition - has turned the estate into one of the most famous ones of coastal Chianti. The Poggio al Casone estate hosts the experimental vineyards of the University of Pisa dedicated to the research and preservation of local varieties.
