The drinks of the future are aromatically multi-layered, break with old conventions and most of all they are one thing: Sustainable! At the fizzz Lounge, innovative ideas were presented that make the most out of every ingredient - and even find use for the last bits. That is good for the environment - and for your wallet.
The current central theme of gastronomy is called "sustainability". Plastic drinking straws are already on the red list, however, this is only the beginning! Especially when it comes to mise-en-place, the philosophy of "zero waste" is flourishing. New technologies and intelligent use of resources form a new counterbalance to the throwaway mentality and raise exceptional drinks to a new level.
Zero Waste, full Flavour!
Four pioneers of the bar scene provided insights into their creative and sustainable use of ingredients at ProWein. On the basis of specially created drinks, they showed how "green drinking" can be innovatively implemented on the basis of intelligently used ingredients.
Even though the head bartender of the fizzz Lounge 2019 is reviving the traditional speakeasy culture in his "Stairs Bar" in Berlin, his work is impressively progressive. Konstantin's own creations rely on his ingenuity as well as on the especially sustainable use of ingredients. The tartness is provided by homemade lemon and lime water, the blends become liqueur. Instead of protein for the drinks, he uses aquafaba, the thick cooking liquid from the chickpea tin. The chickpeas themselves become delicious hummus. Konstantin Hennrich combines the art of mixing and sustainability into a trendsetting combination!
He is one of the country's most creative bar personalities. Since 2013, he has been one of the sources of the success behind the award-winning "Spirits Bar" in Cologne, which is without doubt one of the absolute top addresses in Germany. However, Dominik Mohr is also someone who shares his knowledge and passion with others. As co-founder of the "Bar Symposium Cologne", he has created a platform for creative and modern bar culture, making him one of the pioneers of progressive bar culture.
No dress code, no pressure, only pleasure. André Pintz consistently follows this motto in his Leipzig "Imperii" bar. In 2015, the creative mind, whose bar career had already experienced a meteoric rise early on with stations in Paris, for example, dared to take the leap and opened up his first business of his own. Here he makes no compromises, lets his creativity flow freely and combines his spirit in selected creations of his own, from classic to modern.
Bar visionary, entertainer, jack-of-all-trades, old hand - there are many attributes that fit Eric Bergmann, but first and foremost he is one thing: A top bartender and perfect host. With his bar "Jigger & Spoon", opened in the vault of a former bank in 2017, he has managed to achieve a great success in Stuttgart. Encased in thick, reinforced concrete and two storeys underground, Eric Bermann pursues a clear mission: "We want to cater for every taste and at the same time revive honest classics such as the Daiquiri, Tommy´s Margarita or the Gimlet". At the fizzz Lounge, he shows how this claim can be combined with sustainable work.
