Over the past few years, growers have spent more time in their vineyards than ever before. In addition to frequent weather extremes and changing conditions in the world of wine, this has also meant significant investment to make vineyards more resilient to climate change. In the past, the wine industry felt bound to an often rigid and always exclusive definition of wine, but during the crisis, a serious rethink has taken place. Be it co-fermentation, hard seltzer or even non-alcoholic: New categories of hybrid drinks and inventive packaging are being received like stars in an industry that used to be deeply committed to tradition.
