Diago

Tenuta Zicari - Diago Red of Salento I.G.T. Gr. 14.5° Vol.
Grape variety: NEGRAMARO 100%
Production area: Diago - Faggiano - Taranto
Training system: Espalier with cordon spur system
Plants density/hectare: from 3.000 to 4.000
Soil: medium clayey mixture
Yield per Ha: from 8.000 to 10.000 Kg.
Vinification: Grapes, pressed and destemmed, are positioned in the maceration vats at a temperature of 24-27°C for the alcoholic fermentation. The maceration goes on for a total period of 12-15 days alternating the pumping over, punching-down and the delestage (rack and return) At the wine rack moment the wine is put into stainless steel vats with a controlled temperature (17-19°C) where there will be the malo-lactic fermentation.
Harvest: completely by hand between September and October
Serve at 16°-18° C

Yield per Ha: from 8.000 to 10.000 Kg.
Vinification: Grapes, pressed and destemmed, are positioned on the grape skins, in the maceration vats at a temperature of 17-19°C for the alcoholic fermentation. The fermentation happens in pureness by means of selectioned yeasts. The maceration goes on for a total period of 36 hours. At the wine rack moment the wine is put into stainless steel vats.
Harvest: completely by hand between the first and second week of October
Serve at 11°-13° C

Grape variety: CHARDONNAY 80% - FIANO OF PUGLIA 20%
Production area: Lucignano - Taranto
Training system: Espalier with cordon spur system
Plants density/hectare: from 3.000 to 4.000
Soil: medium clayey mixture
Yield per Ha: from 8.000 to 10.000 Kg.
Vinification: The destemmed grapes are positioned in stainless steel vats with separating grilles for 24 hours at a low temperature (cryomaceration) before being softly pressed.
The so obtained must has a spontaneous decantation for 8-12 hours, and afterwards the fermentation starts at a controlled tempera¬ture which doesn’t exceed 16-18°c. At the end of the fermentation the wine is kept for a short period on the total yeast and then it will be kept on a light level of yeats until the arrival of the Spring. The final step is to put the wine into the bottles.
Harvest: completely by hand, between September and October
Serve at 8°-10° C

Our Lands: our Philosophy
Tenuta Zicari Tenuta Zicari, represents in Apulia a farm with ancient traditions. It is located in the heart of the famous producing area of Taranto with its 200 hectars of soil between Taranto and Faggiano, in the lands of the Primitivo of Manduria DOC. Tenuta Zicari is the owner of an old fortified farm located between Massafra and Crispiano, on the way of the “Cento Masserie” (“Hundred Farms”). We want to enhance the value of our lands in order to make Apulian products popular around the world. Our main production is based on native vines, looking after to the selection of Primitivo and Negramaro grapes, together with other native or international vines. Tenuta Zicari programme of a global research of quality together with a careful “zonazione” (“division into zones”) has been representing for many years the winning choice, creating a modern and a functional farm, but with the extreme respect for ancient traditions.

Tenuta Zicari Both our grape-harvest rigorously conducted by hand and the great care in the vinification represent some of the many expressions of love for our land: Apulia. The passion for this land handed down from generation to generation dates back to XVIII century, when the Zicari family came to Apulia and decided that it had to be their land forever. All the traditions of this part of Italy, unique in its kind, and the love for vines, have intensified, with the passing of time, the desire to produce in Tenuta Zicari vineyards and wine of extraordinary quality.

Tenuta Zicari Tenuta Zicari has chosen for its wine names, after having conducted historical researches on the places and their legends, only names coming from their original land. We want to remember all the men who walked these lands before us, men who gave us the chance to live this beautiful reality, a story made of land, sun and love for traditions and wine.
