JOAQUIM CEREJO GRANDE ESCOLHA - RED

Region: Alentejo

Vintage: 2011

Varieties: 30% Touriga Nacional, 30% Alicante Bouschet, 20% Petit Verdot and 20% Cabernet Sauvignon.

Winemaker’s notes: Deep garnet colour, red ripe fruit and jams exuberant aroma with some toast and smoked notes. Full bodied and  velvety on the mouth with dense and firm tannins, revealing a great structure and a strong potencial in ageing. Long and persistent aftertaste.

TECHNICAL DATA:

Vineyard: 11 years old, 8 ton/ha production.

Location: 200 m altitude, 150 km from the Atlantic coast.

Climate and soil: Very hot and dry summers combined with cold winters. Granitic soil.

Vinification: Handpicked harvest during the 2nd week of September. Fermentation in French oak vats on controlled temperature of 25º C during 12 days with posterior cuvaison process.

Ageing: In new, French and American 225 litters oak barrels for 12 months. Bottled without filtration or stabilization not to affect the wine potential, therefore it may develop natural sediment in the bottle.

HERDADE FONTE PAREDES GRANDE ESCOLHA - WHITE

Region: Alentejo

Vintage: 2012

Varieties: 100% Chardonnay.

Winemaker´s notes: Citric color, excellent intensity and aromatic complexity revealing floral aromas. Slight mineral notes granting finesse. Fine and balanced acidity enlightening a remarkable freshness and a long and elegant aftertaste.

Vineyard: 7 years old, 8 ton/ha production.

Location: 200 m altitude,  150 km from the Atlantic coast.

Climate and soil: Very hot and dry summers combined with cold winters. Clay soil.

Vinification: Handpicked harvest during the 3rd week of August. Fermentation in French oak barrels on controlled temperature of 15º C during 20 days.

Ageing: In new, French and American 225 litters oak barrels for 3 months.

Quantity produced: 6.600 bottles.

Vinification: Touriga Nacional.

Winemaker’s notes: Bright pink color, fresh and fruity aroma with strawberry and raspberry. Balanced acidity and evident fruity flavor combined, reveal a wine with great freshness.

Vinification: Harvest during the third week of August. Fermentation in small inox tanks on controlled temperature of 15º C during 16 days.

Stage: In inox tank during 3 months and bottle during 2 months. The wine is not filtered before bottling and may have some natural sediments.

Food pairing: Pasta salads, seafood, chicken dishes.
