Rosato

The colour of rose varies between a pale pink, cherry and claret. It is usually characterized by its fruity aromas and should be served at a temperature between 10 and 14° C. The prevailing taste in the mouth is the sensation of a Iight acidity, aroma and
a light body. Rose wine is excellent when paired with tasty fish or seafood based dishes, pasta with delicate sauces and light
salami or cured meats.

The Volentini Rose wine is made from the vinification of red grapes. As soon as the grapes arrive in the cellar the grape juice
is separated from the skin by a mechanical process. This is followed by cold setting which allows the grape must to separate from the pulp residue and any other impurities. Fermentation takes place at low temperatures in order to preserve aroma and freshness.

The rose has an intense cherry colour and particular notes of red fruits. Its good acidity and aromatic persistence make it very
pleasant in the mouth. It pairs well with all kinds of seafood and fish, light meat or vegetarian appetizers and grilled or baked
white meats.

About us

Company details

Giovanni Valentini’s family has been involved with agriculture for the past 5 generations. They have a strong connection to the land and today, together with his son and daughter, continue the production of wine and olive oil.  The farm also accommodates guests.

Giovanni, together with his son Luca and daughter Chiara, manage the estate. Chiara studies economics at Pisa university and applies her knowledge to the management of the farm. She also maintains relationships with customers and suppliers. Luca was trained in enology at the prestigious San Michele school in Trentino in the north of Italy. He cares for the winery and the vineyards.

Giovanni is chief executive of the estate and all final decisions rest with him. He travels extensively around the world to promote his wine.

The summer holiday period is very busy and many guests stay at the farm. Giovanni, who also speaks German, looks after the guests and conducts wine dinners.
