Caletra

The Caletra 2011 is La Chimera’s flagship wine.  A superior classic red with a 14° volume, the Caletra is a sipping wine made from a delectable blend of Sangiovese grapes and select top-ups of other varieties that do not alter the main taste profile of the Sangiovese, but rather add an exciting dimension to the wine that only improves with time. The Caletra starts life in steel vats, and then spends 15 months in light-toasted French barriques. When it is has matured, it is a perfect accompaniment to red meats such as flame grilled filet mignon, slow rustic stews and game. It is also a delicious partner to Pecorino and Caciotta cheeses. Rosato

The Rosato 2104 is an exciting rosé that has the typical traits of the Sangiovese and Canaiolo grapes which are treated in much the same was as a white wine where the must is separated from the skin before fermentation begins. This results in a lower content of tannins and other substances. The Rosato is best served chilled, and is suitable for most foods except red meat. Sangiovese

The Sangiovese 2014 is made up mainly of the single-clone Sangiovese di Lamole variety. The wine is fermented using traditional methods and has an alcohol content of 14°. It has a deep color and flavor that resemble more robust wines. Like the Raffaello, the Sangiovese is an all rounder that matches most foods, but is particularly well appointed to meat and seasoned chees. In 1999, the Florentine-based Becherini family relocated to Maremma to rediscover a simple, long-lost family heritage of producing beautiful wine. Dusty books with ancient secrets of wine-making were unearthed. The family elders spoke of what they remembered and of how things were done in the old days – i vecchi tempi. Everything was documented and rediscovered with one singular aim: to create a modern Tuscan winery that honored the oldest of traditions.

Three generations of Becherinis have worked passionately, but patiently to realize our dream of releasing our first vintage by 2010. Grandfathers and grandmothers nurtured the venture with their wisdom which kept the vision of the past alive. The young men and women of our family ensured that the winery incorporated the very latest wine-making technologies and best practices. And our children played in the rich, brown soil of our land as they watched and learned.
