The Caletra 2011 is La Chimera’s flagship wine. A superior classic red with a 14° volume, the Caletra is a sipping wine made from a delectable blend of Sangiovese grapes and select top-ups of other varieties that do not alter the main taste profile of the Sangiovese, but rather add an exciting dimension to the wine that only improves with time. The Caletra starts life in steel vats, and then spends 15 months in light-toasted French barriques. When it is has matured, it is a perfect accompaniment to red meats such as flame grilled filet mignon, slow rustic stews and game. It is also a delicious partner to Pecorino and Caciotta cheeses.
