our grapes with the most modern technologies of vinification, to find that elegance, that softness and
the fresh nuance of aromas that capture the essence of our prosperous and sunny hills.

Production Sheet
Classification: spumante extra dry
Varietals: 90% Glera, 10% Bianchetta and Verdiso
Vineyards: Crode and Pecol, from 200 to 300 meters above sea level
Harvest Time: the last ten days of September
Technology applied: primary fermentation occurs in stainless steel tanks for 10 days. The secondary
fermentation occurs in stainless steel pressure tanks at a temperature of about 14-15° C. The duration of the entire cycle is about 50 days.
Alcohol Content: 11,5% vol. Total acidity: 6 g/l
pH: 3,20 Residual sugar: 14 g/l

Sensory Profile
Appearance: straw yellow with greenish hues. Fine and persistent bubbles.
Aroma: elegant, delicate and embracing, with notes of white flowers, green apple and pear.
Palate: fresh and alive, with a good balance of acidity and sugar, accompanied by a fruity and savoury persistent finish.

Serving Suggestions
Serving Temperature: 4-6° (39-43° F)
Food Pairings: the extraordinary softness makes any appetizer really special, and further accompanies a menu of delicate appetizers, vegetable soup, seafood, pasta with light sauce, fresh cheese and white meat.

ZERONOVE: Conegliano Valdobbiadene Prosecco Superiore DOCG Brut

From the finest grapes, chosen from a vineyard of a high calling, comes a superior brut that expresses the best characters particular of Valdellövo Prosecco.
Slow fermentation gives a balanced structure, with nice acidity, minerality and a full bouquet, typical of Conegliano Valdobbiadene terroir.

Vineyard: Crode at 200 meters above sea level
Grape Harvest Period: the last ten days of September
Technology applied: soft pressure with the pneumatic press and static settling of the must. Secondary fermentation occurs directly in a pressurized tank, at a controlled temperature of 14-15 °C.
Alcohol content: 11,5% vol.
Total acidity: 6,5 g/l
pH: 3,20
Residual sugar: 7 g/l

Sensory Profile
Appearance: straw yellow with lime green hues. Fine and persistent bubbles.
Aroma: fine and delicate aromas, with enveloping floral notes of wisteria and acacia, accompanied by hints of green apple and peach.
Palate: soft and aromatic, with fresh acidity.

Serving Temperature: 4-6° C (39-43° F)
Food Pairings: fruity aromas of crispy apple and pear with scents of acacia compliment any appetizer, especially one with fish or vegetables. Its soft and persistent flavour, with pleasant and slightly acidic freshness, enhances any first course dish, but could also be savoured with any other kind
of dish with great satisfaction.

BADE: Conegliano Valdobbiadene Prosecco Superiore DOCG Col Fondo

An ancient tradition, imprinted in sixty year old vines, has inspired this slightly sparkling Prosecco,
produced with the secondary fermentation in the bottle (sur lie). In the heart of the family vineyards,
Benedetto has found an authentic expression of Glera and its land, and with several innovative elements
has created a wine that surprises the palate with its delicate aromas, soft flavour and complexity.

Production Sheet
Classification: frizzante, ancestral method (sur lie)
Varietals: 90% Glera, 10% Bianchetta and Verdiso
Vineyard: the hills of Collalto, Susegana
Grape Harvest Period: last ten days of September
Technology applied: light pressing with the Pneumatic press and primary fermentation at a controlled temperature. The must is conserved on fine lees in stainless steel tanks for six months. The secondary fermentation takes place by means of adding the must from Glera raisins.
Alcohol content: 11% vol. Total Acidity: 5,8 g/l
pH: 3,30 Residual Sugar: none

Sensory Profile
Appearance: straw yellow, with a fine and creamy perlage.
Aroma: the characteristic hint of “bread crust” unites with fresh and fruity notes, typical of Prosecco at the end of fermentation.
Palate: initial soft fruity flavours combine with a hint of yeast, leaving room for a dry and pleasantly bitter taste. In sum, the flavour is generous and well balanced.

Serving Suggestions
Serving Temperature: 4-6° C (39-43° F)
Food Pairings: the abundance of typical fruity notes of Prosecco and aroma of bread crust offer the perfect wine for every informal occasion. At the table, it is best as an aperitif or served with appetizers, to then continue and appreciate vegetable risotto or seafood.
To decant: pour the wine slowly into a pitcher, without disturbing the lees at the bottom of the bottle to maintain a clear wine before serving it in the glass. The best time to enjoy is from July to December, the year after the harvest, but it can be consumed with satisfaction also after a few years.

In Collalto, not far from 2 hectares (4.9 acres) of original vines, in “località Le Crode”, we have planted 8 additional hectares (19.7 acres) of Glera vines, making a total of 10 hectares (24.6 acres): the vineyard has been designed to transfer the hill’s unique soil and microclimate to each and every grape, and therefore each and every wine.

Thanks to Benedetto’s passion and professional skills, Valdellövo has created and produced high quality Prosecco, with excellent results year after year.
