Varietals: 90% Glera, 10% Bianchetta and Verdiso
Vineyards: Crode and Pecol, from 200 to 300 meters above sea level
Harvest Time: the last ten days of September
Technology applied: primary fermentation occurs in stainless steel tanks for 10 days. The secondary
fermentation occurs in stainless steel pressure tanks at a temperature of about 14-15° C. The duration of the entire cycle is about 50 days.
Alcohol Content: 11,5% vol. Total acidity: 6 g/l
pH: 3,20 Residual sugar: 14 g/l

Sensory Profile
Appearance: straw yellow with greenish hues. Fine and persistent bubbles.
Aroma: elegant, delicate and embracing, with notes of white flowers, green apple and pear.
Palate: fresh and alive, with a good balance of acidity and sugar, accompanied by a fruity and savoury persistent finish.

ZERONOVE: Conegliano Valdobbiadene Prosecco Superiore DOCG Brut

From the finest grapes, chosen from a vineyard of a high calling, comes a superior brut that expresses the best characters particular of Valdellövo Prosecco.
Slow fermentation gives a balanced structure, with nice acidity, minerality and a full bouquet, typical of Conegliano Valdobbiadene terroir.

Technology applied: soft pressure with the pneumatic press and static settling of the must. Secondary fermentation occurs directly in a pressurized tank, at a controlled temperature of 14-15 °C.

BADE: Conegliano Valdobbiadene Prosecco Frizzante DOCG Col Fòndo

An ancient tradition, imprinted in sixty year old vines, has inspired this slightly sparkling Prosecco,
produced with the secondary fermentation in the bottle (sur lie). In the heart of the family vineyards,
Benedetto has found an authentic expression of Glera and its land, and with several innovative elements
has created a wine that surprises the palate with its delicate aromas, soft flavour and complexity.

Classification: frizzante, ancestral method (sur lie)
Varietals: 90% Glera, 10% Bianchetta and Verdiso
Vineyard: the hills of Collalto, Susegana
Grape Harvest Period: last ten days of September
Technology applied: light pressing with the Pneumatic press and primary fermentation at a controlled temperature. The must is conserved on fine lees in stainless steel tanks for six months. The secondary fermentation takes place by means of adding the must from Glera raisins.
Alcohol content: 11% vol.   Total Acidity: 5,8 g/l
pH: 3,30                                       Residual Sugar: none

Sensory Profile
Appearance: straw yellow, with a fine and creamy perlage.
Aroma: the characteristic hint of “bread crust” unites with fresh and fruity notes, typical of Prosecco at the end of fermentation.
Palate: initial soft fruity flavours combine with a hint of yeast, leaving room for a dry and pleasantly bitter taste. In sum, the flavour is generous and well balanced.

Food Pairings: the abundance of typical fruity notes of Prosecco and aroma of bread crust offer the perfect wine for every informal occasion. At the table, it is best as an aperitif or served with appetizers, to then continue and appreciate vegetable risotto or seafood.
To decant: pour the wine slowly into a pitcher, without disturbing the lees at the bottom of the bottle to maintain a clear wine before serving it in the glass. The best time to enjoy is from July to December, the year after the harvest, but it can be consumed with satisfaction also after a few years.

Smooth balance for a sublime sweetness at the end of a meal or a dazzle for your taste buds with original combinations: this is N1VO, the new Prosecco Dry Valdellövo. With the customary refined research for aromas and flavours typical of Prosecco Superiore DOCG from the Collalto hillsides, Valdellövo has created its own Dry by skilfully uniting antique Glera grapes with new vineyards. The residual sugar is taken to 21 gr per litre by using the slow fermentation must for refermentation. An enchanting fruity, fresh, and floral chalice for those who prefer amiable and sweet sensations.

SPLENDIDE EMOZIONI ROSA: Rosé Brut Sparkling Wine

An original colour gradient to enchant the eyes before other senses, a rosé that is already a “Beautiful Emotion”. What a surprise for the palate to follow this sparkling wine in its floral and fruity notes which are kept in perfect equilibrium by a refined wine-making technique. The pink colour is very elegant and announces a rich personality, but with a cheeky temperament. This character was born from the high quality of the grapes, its delicacy is the result of soft pressing and a long, slow fermentation of the must and refermentation. A sparkling wine that is absolutely a fine achievement for its perfume and seduces for its taste, an exciting performer of worldliness.

In the Prosecco territory, tradition dictates that every farmer plants a vine plant for their house red wine. This intense wine, created with the typical Bordeaux style grapes, is a demonstration evolved from a cultural heritage, with a soft and elegant tone, enriched with aromas of spices and red fruit.

In a magical landscape, steeped in history, with medieval towers and castles rising among the terraced, green hills, you will find our vineyard Valdellövo, or literally, valley of the wolf.

The beautiful hills surrounding the 12th century city of Conegliano, “pearl of Veneto”, are the strategic passage between the majestic Dolomites and the plains, where the sacred river Piave flows down to the Adriatic sea. In 2000, near Collalto, in the town of Pedrè-Doline, a protected area of land, husband and wife team, Benedetto and Clotilde Ricci, began creating Valdellövo. Benedetto was born and raised in these hills, and has inherited a passion for vine and wine, passed on through generations.  In their vineyards,  Valdellövo offers wines produced only from its own grapes. Vineyards conceived to confer to each grape, and thus to the wine, the unique qualities of this microclimate and soil. Thanks to the passion, but above all to the professional skills of Benedetto, Valdellövo creates prosecco wines of great quality that achieve consistently excellent results.
