AMARONE CLASSICO RISERVA "CAVE DI PRUN" TENUTE SALVATERRA

Geographical location: Tenuta di Prun
Height: 550 meters asl
Exposure: southeast
Soil type: marl typical of Prun Stone covered with a layer of soil rich in humus
Vineyard training system: guyot
Vine planting year: 2003/2004
Vine density: 5,400 vines per hectare
Vineyard management: sustainable agriculture and great attention to natural cycles

VINIFICATION AND AGEING
Harvest: mid/late October with manual harvesting of the grapes with selection of the best bunches
Drying: natural drying in fruit cellar for 3/4 months with a sharp drop in weight of around 30%
Vinification: soft crushing of destemmed grapes in the months of January and February
Fermentation: at a controlled temperature of 18/20°
Fermentation time: about 30 days
Ageing:
  • 80% in wood for 48 months of which:
    2/3 in American and French barriques, half of which are used for the second and third time
    1/3 in large barrels
  • 20% in steel

TASTING NOTES
Amarone Classico 2007 Riserva Cave di Prun has maintained its typicality deriving from its territory, without excessive structure or residual sugar. It is a product with personality and structure, which upon tasting is peculiar in its elegance and refinement rather than power, with a considerable complexity.
In the palate it is rich and elegant, deep and balanced at the same time, still young and with good acidity but already very well-orchestrated. Spicy with the typical notes of cherry and blackcurrant that blend well with the complexity of the wine.

FOOD AND WINE PAIRING:
A great elegant wine requires savoury dishes: game and red meats in general, aged cheeses. Also suitable for consumption between meals, as a sipping wine.

TASTING NOTES
Amarone DOCG has maintained unchanged its typicality, so that “the essenceof the territory” of Valle di Mezzane and Cazzano di Tramigna powerfully emerges. Rich in colour, firmly structured but with fresh notes. This wine has personality and is also able to convey elegance and depth upon tasting.

In the palate it is rich and deep, elegant and potent at the same time, still young but already very balanced, with the typical notes of currant and wild berries that blend well with the complexity of the wine.

FOOD AND WINE PAIRING:

CHARACTERISTICS OF THE YEAR

TASTING NOTES
Pinot Grigio 2014 is a straw-yellow elegant and refined wine. Its notes are more mature than fresh, because the hang time lasted one extra week. The great minerality accompanied by a good structure makes it an interesting wine.
In the palate this wine is refined and elegant, fresh and acid, characteristic. Edgy when young, after a couple of years it becomes more balanced.

FOOD AND WINE PAIRING:
A fresh and agreeable wine, suitable as an aperitif, for starters and pasta, obviously fish and in general most Mediterranean cuisine.
Pleasant to accompany the entire meal.

Tenute SalvaTerra originates from the coming together of the Furia family, boasting deep roots in the Verona area as a producer for over 30 years, and a more innovative component, represented by a group of entrepreneurs who, in addition to the capital, have offered their skills and experiences to build a successful project. The goal of Tenute SalvaTerra is to enhance its vineyards and its wines, linking its brand to the identity of an area, Valpolicella, having many potentials and resources. THE ENTREPRENEURS: CLUB DEAL

A club deal is a group of investors who share the risk and/or pool the necessary resources for a single investment. In a club deal, the investment consists in acquiring the shares of the company directly and not through mediated tools such as investment funds. Each investor has decided to invest precisely in our Company, in its history, in its people and its potential. The Furia family, founder of the Company, holds a considerable stake and Mirko Furia still plays a strategic role in the Company. Club deal also means being part of a small number of investors, with whom you can speak face to face and share over time the evolution of the investee company. As in all clubs, however, there must be clear rules and defined roles for the good of the investee company, which requires special skills. Investors are themselves high profile entrepreneurs in their professional context and therefore can contribute contacts and know-how to the project. In particular, one of the investors, Paolo Fontana, having management experience in the industry, is also in charge of leading the Company's operations. Club deal organised by the specialized company Canova Srl.

VIGNAIOLI LA CASTELLANA

The Company was established in the nineties by the Furia Family in Valgatara in the heart of Valpolicella. Over the years, it has rapidly developed becoming one of the landmark Wineries in Valpolicella, leader in drying techniques to produce Amarone, Ripasso and other wines of the same category.

Vignaioli owns 100% of the farm Tenute SalvaTerra S.r.l. which is responsible for the agricultural management of all the Tenute with particular focus on the vineyards selected for the production of grapes intended for the high-end cru line “Tenute SalvaTerra”.
