Huma Yarra Valley Cab Merlot 2012

The cabernet sauvignon and merlot fruit for this wine was harvested from our family-owned vineyards in the renowned Yarra Valley. It was picked at optimal ripeness, and fermented in traditional open fermenters. Once fermentation was complete, this wine was blended post-press and allowed to undergo malo-lactic fermentation and maturation in French oak barrels and temperature- controlled stainless steel tanks.

The 2012 Huma Yarra Valley Cabernet Merlot is an exubrant and lively wine showin classic varietal charactoers includin blackcurrentad chocolate with supportfrom French oak.

Soft tannins and balanced acidity give a supple, lingering finish to this exceptionally drinkable wine.

This wine will complement a vast array of dishes.  Examples include traditional roast beef or lamb, tomato–based pasta dishes, rich winter casseroles, barbeques, or a selection of cheeses.

Cahillton Yarra Valley Viognier 2007

2007 was a challenging vintage throughout Victoria. Late winter was cool and dry with significantly lower rainfall levels in the lead up to harvest. As a result, vine vigour was reduced which led to more concentrated flavour development in the lead up to ripening. Severe frosts followed by a period of intense heat in early February saw an overall crop reduction and the fruit was harvested 2-3 weeks earlier than usual to avoid overripe characters developing ensuring the ideal sugar/acid levels were achieved.

Our Yarra Valley fruit was harvested in the cool of the night and pressed off skins immediately, ensuring minimal skin contact. Following fermentation and clarification the wine underwent extended maturation in French oak, regular lees stirring and partial malolactic fermentation.

 The 2007 Cahillton Viognier is pale gold in colour, with an intensely varietal nose.  Aromas of apricots and peaches are supported by subtle French oak.  The palate is rich and complex, showing concentrated fruit flavours with a clean finish and lingering aftertaste.

This wine will complement medium to strongly flavoured white meat dishes. Examples include roast chicken with fig and walnut stuffing, maple roasted pork or lighter Asian dishes (particularly those containing ginger).  The texture and light creaminess of the palate also allow richer cream-based recipes as a definite option.

Whitebox Heathcote Shiraz 2013

The 2013 growing season in Heathcote proved to be excellent for Shiraz.  Perfect weather during flowering ensured optimal crop levels. Rainfall was reasonable and fell at regular intervals, and temperatures were slightly above average

The Shiraz fruit for this wine was sourced from our family-owned Heathcote vineyard at the base of the Mount Camel range. Each vineyard block was fermented separately in traditional open fermenters, and given varying levels of maceration to enhance complexity and give a wide array of flavours and textures to the final blend.  Malo-lactic fermentation and maturation in new and old French oak and temperature-controlled stainless steel tanks for periods varying from six to eighteen months (dependent on wine structure) followed, prior to assemblage of the finished wine.

The 2013 Whitebox Heathcote Shiraz is deep purple in colour highlightingall of th hlmaks of a great vintage in the region. The nose hows a intense bouquet with aromas of red fruit, chocolate and leather The palate is typical Whiteox; rich, intense nd complex with flavous f plm, blackberr and spice supported by French oak and a lingering finish.

Whitebox wines are fashioned with respect to terroir and tradition. Drinking well now, this wine will continue to develop in the bottle for many years to come.

We recommend serving this wine with rich red meat dishes or strongly flavoured cheeses.  It is equally at home with a barbeque, or a hearty winter casserole. The combination of fruit intensity and completely ripe tannins makes it extremely versatile as a food match.
