Organic Extra Virgin Oil The whole of Podere della Bruciata experience in making high-quality organic products started with the production of olive oil.
The early olive grove survived at the freezing winter of 1986, and from it new trees were obtained.
The picking happens some time before the olives are fully ripened, in order to obtain better results.
The oil itself is produced on the very same day of the picking, which is exclusively manual. During the pressing, it is important to make sure that the olives dont get in touch with the air, to prevent oxidation.
The oil is not filtrated but decantato instead, to preserve its peculiar characteristics.
By paying extreme attention to details and putting enough effort, the olive oil results in being of high quality, with strong scents and flavours and very little acidity.
