MESHI - TOSCANA I.G.T. ROSATO

100% SANGIOVESE

Chianti Classico south area - 480 m. (1574 ft.) above sea level. Southern exposure, Mediterranean climate, sunny and windy. “Galestro” and “Alberese” rocky soil.

HARVEST:
In 2015, the harvest was done at the beginning of October, after a  sunny summer:  with targeted agronomic practices were obtained quality grapes that have perfectly completed the phenolic ripening on the vine before harvest. The grapes were harvested by hand, transported quickly to the winery and gently poured in crushing-destemmer.

WINEMAKING:
Within hours of the crushing of the grapes, the must was separated from the skins and subjected to a slow period of fermentation with constant temperature control. After fermentation, the wine rested for a few months in stainless steel tanks before being filtered and bottled.

TASTING NOTES:
Intense flavor of small red berry fruits, well balanced with good freshness and mineral taste.

SERVING SUGGESTIONS:
To enhance its fruity, this wine should be served chilled at about 53° F. It is excellent as an aperitif or to accompany meals. Meshi is recommended with fish meals, pasta summer dishes, couscous and white meat.
Can be used also in cocktails and it is perfect added to a smoothie of fresh peaches.

Harvest
The 2014 harvest started at the beginning of October, after a summer quite humid but sunny enough to reach a good ripeness of grapes. Grapes were picked by hands, quickly transported to the cellar and moved to the de-stemmer and crusher machine.

Drawing off without pressing the peels;
Aging in stainless steel tanks;
Filtration with medium sterilizing paper sheets.
Wine description
With its simplicity and elegance, given through the use of Sangiovese grapes only, without the influence of aging in wood barrels, this wine represents well the territory of central Tuscany: it has a ruby-red color, is fresh, perfumed and nice balanced, exhibiting fruity and spicy aromas and flavors.

Serving suggestions
For its freshness, this wine can accompany many different dishes, from pasta to pizza, but also delicate dishes of beef, chicken and lamb. Even is a red wine, for its light structure can also be combined with tuna fish.

Harvest
The 2012 harvest started at the beginning of October, after a rainy spring and a warm summer. This wine is produced from selected mature grapes in a vineyard with low yield of grapes per hectare (about 45 quintals/ha). Grapes were picked by hands in 15 kilos baskets from the plant and were transported in a short time to the cellar. Immediately after, grapes were delicately and smoothly spilled in the de-stemmer and crusher machine.

Wine-making
Maceration at 2°C of temperature in stainless steel tanks;
Fermentation by adding kosher for Passover yeasts in stainless steel tanks;
Controlled pressure and temperature during fermentation.
Drawing off without pressing the peels;
Aging (Elevage) in medium-toasted French-oak barrels for twelve months.

Wine description
The taste of this medium-bodied wine is representative of the territory of central Tuscany, regulated by the Chianti Classico Consortium: is lively ruby red, associates smoothness, elegance and style with a rich and fruity bouquet of cherries, wild berries and violet.

Serving suggestions
This wine combines perfectly with grilled red meats, braised beef and lamb dishes.

Wine description
As an excellent expression of a wine made only with Sangiovese grapes, this full-bodied wine is ruby red, velvety and elegant. It offers an imposing structure with a rich and fruity bouquet of cherries and wild berries, aromas of spices and violet.

Serving suggestions
This wine combines perfectly with elaborate meat and game dishes or aged cheeses. This wine can be preserved in the bottle for years, then it should be allowed to be breathe before being served.

The Chianti Classico Gran Selezione is the new top level typology of Chianti Classico wine’s appellations, making up only about 4% of the total Chianti Classico wine production. For regulation, this wine is produced only from a selection of the estate’s best grape, and must be aged for a minimum of 30 months, including 3 months of bottle aging. To be a Gran Selezione, this Chianti Classico follows the strictest standards of chemical parameters, reaching outstanding organoleptic characteristics, recognized and approved only after a blind tasting by a special committee of expert wine makers.

Harvest
The excellent climate during the 2011 year allowed a balanced and constant ripening of the grapes. The grapes were selected specifically for this wine at harvest, from a vineyard with low production, not more than 35 quintals of grapes per hectare (2,47 acres). The grapes were harvested by hand in baskets, and were transported quickly to the winery and gently transferred into the de-stemmer and crusher machine.

Wine-making
All the wine making processes were done with the control of the temperature and pressure produced in fermentation. After the fermentation, this wine underwent a period of maceration with the skins, and was filtered, without passing in the winepress.
Ageing took place for 30 months of which 24 months in medium-toasted French oak barrels. This wine was also aged for three months in bottle before release.

Wine description
From the organoleptic viewpoint, in general the Gran Selezione has a great structure that, for its provenience, gives superior balance and harmony, depth of flavor and aromatic complexity, all under the unmistakable “Sangiovese” signature. On the palate it combines immediacy of fruit with the fascinating nuances, typical of wines that take long to evolve.
As an excellent expression of a wine made only with Sangiovese grapes, ASSAI is a full-bodied wine with an intense ruby color. During aging in French oak barrels, it reached richness, complexity and the right balance of taste and smell. It is a pleasantly intense wine, fruity and spicy, slightly balsamic on the nose, smooth, consistent and persistent in the mouth.

Serving suggestions
This wine combines perfectly with elaborate meat and game dishes or aged cheeses. This wine can be preserved in the bottle for years, then it is recommended to aerate it before being served.

GRAPPA DI CHIANTI CLASSICO

42,0 % by Vol.

Packaging:
In 500 ml bottle.

Production:
The Terra di Seta grappa was produced exclusively with fresh marc from the best Sangiovese, selected in the company for the production of Chianti Classico wine and organically grown. After racking and without being pressed, the grape skins were sent immediately to Nannoni Distillery (Paganico, GR), thus maintaining a significant percentage of humidity and optimum freshness. The marc was immediately distilled in selection, through a process of discontinuous distillation, in columns with a low degree and indirect steam; this type of distillation allows to keep the scents of fresh marc in the distillate.
"Nannoni" produces grappa for the most prestigious wineries of the whole Italian territory and the Pellegrini family gives the skins of their own grapes to this facility from three generations.

Warnings! Although Terra di Seta wines are certified kosher, grappa doesn’t have this certification because it was distilled outside the company.


GRAPPA BIANCA
The white grappa Terra di Seta is transparent and clear. It is a grappa of great cleansing and immediacy, with an intense nose that immediately evokes hints of fresh marc. The palate confirms the olfactory sensations, remaining soft, not sweet and persistent, leaving a pleasant feeling of raisins.

GRAPPA RISERVA
This is a grappa from meditation. It was aged for a year in French oak barrels, and presents a visual inspection of pale yellow color with light amber tones. The aromatic evolution occurred during maturation in barrels is confirmed in the nose by the perception of delicate fruity and spicy. On the palate the grappa Reserve is warm, tasty and soft, confirming olfactory perception and maintaining a long and pleasant finish.

About us

Company details

Since 2001, Terra di Seta winery is part of a family-run organic farm conducted by Daniele Della Seta and his wife Maria Pellegrini. The farm is on a hill near Siena, with a 360 view on the Tuscan countryside of the famous Chianti Classico area.

Our territory
Typical of the Chianti Classico area, in the central part of Tuscany in which wine has been produced for centuries, our vineyards are on a hill at about 1,574 feet above sea level, in a natural south-facing amphitheater: a sunny and windy place, with warm days and cool summer nights, perfect for the ripening of Sangiovese grapes, the most important variety of Tuscany, the grape of our tradition.

The ground is rocky and dry, letting the roots of the vine go deep and find water rich in minerals: it is these last ones that give strength and elegance to the wine.

 The Chianti Classico wine history
This is a land of ancient traditions that was civilized in remote periods first by the Etruscans, who left many traces of their activity in the wine sector, and then by the Romans. The first document in which the name Chianti appeared in reference to the wine produced in the zone dates to 1398. In 1716 Cosimo III de' Medici, Grand Duke of Tuscany issued an edict with the norms for the production of this wine, the first time in history that someone had promulgated a law about wine! Since 1716 till now the wine of this area continuing to be strictly regulated by the Chianti Classico Consortium. The term “Classico”  means, therefore, “the first”,  “the original.”

 The family
While the Della Setas come from an ancient  family settled in Rome since 2000 years, the Pellegrinis are an old Tuscan family, from Pitigliano and Capalbio villages, with three generations of strong tradition and experience in wine production.

Since the 2001, our family started this adventure by purchasing the winery and adopting organic agriculture methods. In the 2008, we decided to add to our whole production the kosher certification, i.e. the suitability of a food for a Jew, using advanced technologies, especially conceived to facilitate some traditional procedures without compromising the high quality level of the wine, so typical of the Chianti Region. With the same strong combination of care, tradition and technology, we produce extra-virgin olive oil and honey. We also organize a farm holiday accommodation, wine tasting tours and every year we try to carry out new projects.

 The winemaker
Our oenologist is called Enrico Paternoster. In addition to being a friend, he has  the professional experience that led him to the top of Italian enology.  Enrico is in charge of wine cellars at the Agricultural Institute of San Michele all’Adige  (IASMA, Trento), the most important Italian wine school and wine research center, very well known all over the world. Enrico has received many awards, especially for its ability to create refined and elegant wines, particularly characteristic of the production area.

 
In conclusion, the characteristics of a territory, the history of a wine made respecting strict rules, meet the spirit of our family and the skills of a great winemaker.

In Italian Terra means both soil, land and earth, and Seta means silk, while it is also part of the family name. This brand represents therefore the core of our family's philosophy ad goal, which is to obtain traditional, excellent, and refined products from our unique land property.
