MESHI - TOSCANA I.G.T. ROSATO

100% SANGIOVESE

TERROIR:
Chianti Classico south area - 480 m. (1574 ft.) above sea level. Southern exposure, Mediterranean climate, sunny and windy. “Galestro” and “Alberese” rocky soil.

GRAPES':
Sangiovese 100 %. Estate vineyards.

ALCHOOL: 14,5% by Vol.

WINE CERTIFICATIONS:
Organic wine (I.C.E.A. organic certification, EU only).
OK kosher certification (USA), kosher for Passover, ‘not mevushal’.

HARVEST:
In 2014, the harvest was done in early October, after a summer quite humid but sunny enough; with targeted agronomic practices were obtained quality grapes that have perfectly completed the phenolic ripening on the vine before harvest. The grapes were harvested by hand, transported quickly to the winery and gently poured in crushing-destemmer.

WINEMAKING:
Within hours of the crushing of the grapes, the must was separated from the skins and subjected to a slow period of fermentation with constant temperature control. After fermentation, the wine rested for a few months in stainless steel tanks before being filtered and bottled.

TASTING NOTES:
Intense flavor of small red berry fruits, well balanced with good freshness and mineral taste.

SERVING SUGGESTIONS:
To enhance its fruity, this wine should be served chilled at about 53° F. It is excellent as an aperitif or to accompany meals. Meshi is recommended with fish meals, pasta summer dishes, couscous and white meat.
Can be used also in cocktails and it is perfect added to a smoothie of fresh peaches.

TERRA DI SETA - TOSCANA I.G.T.

TERROIR:
Tuscany region, Siena district,  Catelnuovo Berardenga municipality;
Chianti Classico south area - 480 m. (1574 ft) above sea level, southern exposure, Mediterranean climax, sunny and windy, ‘Galestro’ and ‘Alberese’ rocky soil.

GRAPES:
Sangiovese and Canaiolo. Organic grapes.
Estate vineyards.

ALCHOOL: 13,5% by Vol.

WINE CERTIFICATIONS:
Organic wine (I.C.E.A. organic certification, EU only).
Kosher for Passover certification ‘not mevushal’ (OK Certification).

HARVEST:
The 2012 harvest time was at the beginning of October, after a rainy spring and a warm summer. This wine is produced from selected mature grapes in vineyards with low yield of grapes per hectare. Grapes were picked by hands from the plant and were transported in a short time to the cellar. Immediately after, grapes were delicately and smoothly spilled in the de-stemmer and crusher machine.

WINE-MAKING:
Fermentation by adding yeasts in stainless steel tanks;
Controlled pressure and temperature during fermentation.
Drawing off without pressing the peels;
Aging in stainless steel tanks;
Filtration with medium sterilizing paper sheets.
Addition of Sulphur Dioxide as antioxidant and antimicrobial agent under the limits of the organic production.

WINE DESCRIPTION:
This wine represents the territory of central Tuscany: it has a ruby-red color, is fresh, perfumed and nice balanced, exhibiting fruity and spicy aromas and flavors.

SERVING SUGGESTIONS:
For its freshness, this wine can accompany many different dishes, from pasta to pizza, but also delicate dishes of beef, chicken and lamb. Even is a red wine, for its light structure can also be combined with some fish such us tuna or salmon.

TERRA DI SETA - CHIANTI CLASSICO D.O.C.G RISERVA

WINE CERTIFICATIONS:
Consorzio Vino Chianti Classico - From organic grapes (I.C.E.A. organic certification) - OK kosher for Passover (USA), ‘not mevushal’.

HARVEST:

The 2010 harvest time was at the beginning of October, after a rainy spring and a warm summer. This wine is produced from selected mature grapes, in a vineyard where the yield of grapes per acre is very small, less than 1,100 liters of wine per acre. Picked by hand in small baskets from the vine, grapes were transported in a short time to the cellar and immediately after, gently placed in the de-stemmer and crusher machine.

WINE-MAKING:
Maceration at 2°C of temperature in stainless steel tanks;
Fermentation in stainless steel tanks;
Controlled pressure and temperature during fermentation.
Drawing off without pressing the peels;
Aging (Elevage) in medium-toasted French-oak barrels for eighteen months and a minimum of three months of bottle aging.
Addition of Sulphur Dioxide as antioxidant and antimicrobial agent.

WINE DESCRIPTION:
As an excellent expression of a wine made only with Sangiovese grapes, this full-bodied wine is ruby red, velvety and elegant. It offers an imposing structure with a rich and fruity bouquet of cherries and wild berries, aromas of spices and violet.

SERVING SUGGESTIONS:
This wine combines perfectly with elaborate meat and game dishes or aged cheeses. This wine can be preserved in the bottle for years, then it should be allowed to be breathe before being served.

The charm of the Chianti, just few minutes far from Siena

The farmhouse Le Macie is a family-run tourist facility, inside an organic farm certified since 2001, directed by Maria Pellegrini and Daniele Della Seta.
In the heart of Chianti, about 480 meters above sea level, Le Macie is overlooking Siena and dominates, with a view of three hundred and sixty degrees the surrounding countryside; is therefore the ideal place for those who want to enjoy the quiet of an authentic rural landscape of the Tuscan hills, made of woods, vineyards and olive groves, the unique charm of a farmhouse in Chianti, just a few minutes from Siena.

The apartments for guests are located in the farmhouse of the '700 century, where we also live the owners, and in the old barn, recently renovated, offering comfort and quietness. In the farm there are also an infinity pool and a Jacuzzi.

By definition, the farmhouse is a structure in which guests are staying at a farm. There is therefore no farmhouse without agriculture. The farmhouse Le Macie is located in the center of the facility, specializing in the production of typical products of the Chianti region. In particular, the wines are produced in the new cellar, built respecting the architectural  and environmental criteria of the Chianti area, through the use of local materials and the use of sustainable energy sources.

Daniele and Maria, the owners of the farm, they want to preserve the uniqueness of this land through sustainable agriculture, sensitive to the traditions of Chianti and the conservation of biodiversity.

Organic production is based on the careful cultivation of vines and olive trees, the selected and manual pruning, the use of organic products and controlled grassing, everything to make plants more resistant to disease and increase the organic matter of the soil. Those staying in the farm will have the opportunity to attend these rural works that alternate in the farm during seasons: from the pruning of the vines and olive trees to the maintenance and care of the fruits and beekeeping practices, from the grape harvest and olive picking  to the production of wine, oil and honey. During the stay is then possible taste the farm products, all strictly organic.

The most obvious result of a sustainable agricultural practice is to maintain biodiversity. On the farm in fact, there are many plants and flowers of the area, typical of the Mediterranean flora, from the holly to the Corbezzolo tree, from many aromatic plants to beautiful spontaneous orchids. Fireflies, bees and ladybugs flit among the flowers in the warmer seasons. In addition to plants, during your stay is it possible to observe many species of birds, some rarely seen elsewhere. At sunset is it possible to meet or hear more timid animals such as owls, tawny owls, hedgehogs, porcupines, foxes, badgers, wild boars and roe deer.
