CHOBEO DE PECIÑA

WHITE FERMENTADO EN BARRICA
 

The wine:
From our grapes Viura from “Finca Iscorta” vineyard, planted about 50 years ago, we have elaborated this elegant wine. 

The grapes are hand-harvested in boxes of 15 kilos to avoid any type of break, oxidation or fermentation before the entry in the winery. Later, they are selected on a vibrating sorting table, where those that do not overcome the maximum quality are discarded, obtaining the grains come enterely to the press.

Then the juice and skins are pressed and we obtain a complex must that will be entered in new American oak casks, where it will do the alcoholic fermentation for one month, receiving battonages every day to obtain a well structured wine.

After the fermentation and after one racking, it will stay 2 months more in cask to obtain the balance between wine and wood.

CHOBEO DE PECIÑA

GRAN CHOBEO DE PECIÑA
 

The wine:
Elaborated with the maximum care with tempramillo grapes from"Finca Iscorta" vineyard, only 1250 bottles have been made.

Hand harvested and transported to the winery in small cases of 15 kilos, the grapes were selected in a sorting table. Then, they did a 5 days cold pre-maceration to get a much more structured and complex wine. The alcoholic fermentation at controlled temperature lasted for approximately 15 days and the resulting wine entered into medium toast new American oak barrel, where the malolactic fermentation was done.

The wine was aged in new American oak barrel for 9 months, where was racked three times using the traditional “cask to cask” gravity decanting method. Straight after, it was bottled to refine the wood taste of the ageing in casks.

This wine has not suffered any process of filtration, fining or stabilization, obtaining the maximum expression of the terruño from Sonsierra area.

CHOBEO DE PECIÑA

The wine:
The grapes come from vines over 40 years old which were hand harvested in small cases of 15 Kg and selected in a sorting table.

The quality grapes are put through a small destemmer that removes the cluster stalks, leaving only the berries. The exclusive gravity-fed filling system of our own design, ensures the berries reach the fermenters whole, without breaking or releasing any must. That´s what we call a semi-carbonic maceration.

Then, the fruit begins to ferment spontaneously for approximately 15 days with a maceration of 20 days.

The wine was aged in new American oak casks for 9 months, where was racked three times using the traditional “cask to cask” gravity decanting method. Straight after, it was bottled to refine the wood taste of the ageing in casks.

Bodegas Hermanos Peciña S.L. was founded in 1992 by Pedro Peciña Crespo with his three children in a small winery in the center of San Vicente de la sonsierra, where only “cosechero” wine was elaborated. In 1997 the firm began a new phase, with the inauguration of the new bodega and the elaboration of white wines and aged red wines: Crianzas, Reservas, Gran Reservas.

Pedro´s grape growing accumulated experience over the years in an historical old school bodega was useful to launch his project under his leadership.

The bodega has 50 hectares of own vineyards, an installation to handle 1.000.000 kilos of grapes, 4.500 American oak barrels fitted in three cellars and an two aging stores for 500.000 bottles 

Since its founding, investments in new projects have been increasing every year:

1992 foundation and inauguration of the small bodega.

1997 inauguration of the new bodega.

1999 opening of the wine-shop and free tours to the bodega.

2000 opening of the dining room with capacity for 30 guests.

2003 inauguration of a new cellar with capacity for 1.000 barrels 

2005 Inauguration of own design gravity elaboration system, unique in Spain.

2006 inauguration of new housing for the employees and agricultural storing facilities next to the main building.

2007 Expansion of gardens, parking and recreation area.

2011 Construction of a new cellar for aging the “Chobeo de Peciña” wines, “Amigos de Peciña” social room and and a space to preserve our old vintages wines.
