Luis Medrano is made from the ion of the best grapes available at the winery: vineyards over 45 years old, yielding 2500 to 3000 kg/ha. Amador Medrano chooses the most adequate plotplots, depending on the climate, disease, etc., which differ every year.
The wine elaboration takes place in French oak vats, and then undergoes a 2 day process of cold maceration, followed by 26 days of fermentation in temperatures of 28ºC less. The malolactic fermentation takes place in a new French oak barrel and, upon completion, it is transferred to yet another French oak barrel, where it remains until having spent a total of 11 months in the barrels, before being bottled.
