TASTING NOTES:
This wine has a straw-yellow to golden yellow colour, it is well structured, with a mild-to-sharp fragrance and a dry and slightly aromatic taste. Lightly spicy scents give space to hints of clove, rose and lychee.

VINIFICATION:
White-wine vinification in steel tanks until mid-fermentation.
At the end of fermentation, the wine is racked to eliminate the gross lees. After this, the product is put into barrique (of which 30% are new), where it remains with fine lees for about 2 months with 2/3 battonage every week. Filtration and bottling.

Food pairing:
It is suitable for fish appetizers, pâté, foie gras, but it is also excellent as an aperitif.

TASTING NOTES:
Straw-yellow colour with greenish highlights and a fine and persistent perlage. The fragrance features notes of fresh fruit and floral scents reminiscent of acacia flowers, while it is pleasing, fresh and soft on the palate.

VINIFICATION:
Grapes are destemmed, crushed and pressed immediately at arrival in the winery. Fermentation of the product lasts 14 days at a temperature of 16°C. Following a fining filtration, the product is used for sparkling winemaking. The basic wine, to which sugar and selected yeast are added, is placed in an autoclave, and a slow natural fermentation at controlled temperature (16-18°C) is performed for a period of about 40-50 days. When the desired pressure (5 bar) is reached, the sparkling wine is cooled, and polishing filtration and bottling can be performed.

FOOD PAIRING:
Particularly suitable both for aperitifs and throughout the meal.

Tasting notes:
Distinctly marked bouquet. Reminiscent of acacia flowers. The taste is dry, gentle, full, pleasantly bitterish, with a notable hint of Artemisia.

VINIFICATION:
Grapes harvested at a temperature of 26°C are destemmed and crushed immediately at arrival in the winery. Immediate soft pressing to prevent the transfer of colour from the skins. Cooling of the must at 15°C. One night decanting. Racking of the clean must and inoculation of selected yeasts. Fermentation at 18°C for 10 days. Racking and refinement in stainless steel vats, where he remained for three months on its lees.

Food pairing:
Suitable for pairings with ham, fresh cheese, first courses with red sauces and white meat. It is best suited with regional dishes like gnocchi with pumpkin, herb risotto (especially nettle risotto), but also stewed snails, goose cooked in various ways, Grado fish soup, lightly smoked trout and shellfish.
