Le Caillou

Rouge 2015

The 2015 vintage benefited of optimal weather conditions and promises an exceptional vintage, with an excellent ageing potential.
The wines are generous, with a wonderful structure, characterized by beautiful colors and excellent maturities.

This year was characterized by a mild winter, a warm spring with normal rainfall, following by a hot and dry summer with some heat picks exceeded several times 37°C.
The mid-September storm allowed the vines to avoid a too much extended hydric stress and to mature the grapes to the perfect state. These favorable weather conditions allowed us to harvest very healthy grapes.

White wines present a perfume of white and yellow flowers (acacia and linden tree), on generous mouths, fruity, refreshing with beautiful tensions. 2015 red wines present strong personalities, with excellent balance and beautiful concentration. We will find beautifully dark and deep colors on this vintage. Mouths are rich, very well-balanced, fruity, presented silky tannins, on beautiful length on the palate. These wines are well calibrated to age for many years.

This exceptional vintage may also be tasted in its youth but has the potential, for sure, to be kept in the cellar for many years, as well as the 1990, 1998, 2010 vintages.

VINIFICATION
Harvest started on September 23rd for Syrah, on September 24th-25th for Grenache and on September 28th for Counoise and Mourvèdre.

Hand picking with sorting in the vineyard and then in cellar. De-stemming and vinification in cement tanks with wild yeasts. Pump-over and delestages are made during all the grape maceration (21 days).

AGEING
In cement tanks and in foudres for 2 months.

2014 VINTAGE

2014 vintage, is on the continuity of 2013 vintage, offering beautiful wines with freshness.
This vintage started with mild rainy winter, allowing the hydric reserves have been reconstituted, followed by a hot and dry spring (1°C warmer than the average). All the parameters were combined to decide to move forward the harvests.

Because of a summer punctuated with rains, fresh nights and less sun than the averages of the season, 2014 vintage losts of its precocity to become one of the latest vintages. Some rains occurred at the end of the harvests, requiring more vigilance on the sorting.

2014 vintage, is characterized by fruity wines, a good balance, less alcohol than the average ( 1%vol less), ample and round mouths with fine and well incorporated tannins. White wines have beautiful acidities, offering wines on tensions. 2014 leads us to predict a good potential of ageing for those who will have the patience to keep them enough time.

VINIFICATION

Harvest started on September 12th for the Syrah, on September 27th for the Grenache and on October 1st and 6th for Carignan and Mourvèdre.

Hand picking with sorting in the vineyard and then in cellar.
De-stemming and vinification in concrete tanks with wild yeasts. Pump-over, punch-down and delestages are made during all the grape maceration (27 days).

AGEING : In foudres for 15 months.

BOTTLING DATE : On November 27th 2015.

Harvest started on September 16th for Syrah and on September 18th for Grenache.
Hand picking with sorting in the vineyard and then in cellar.
Vinification in whole bunches without adding sulfite. Maceration is made for 22 to 24 days.

AGEING : In stainless steel tank.
BOTTLING DATE : On January 21st 2016.

Company details

Organic and Biodynamic philosophy

Natural cultural practices at Le Clos du Caillou have been started with Claude Pouizin in 1950 : regular plough, organic compost. Since the early years of the vineyard, we put all our efforts to work in a natural way. 

Thats is why, Jean-Denis Vacheron started the organic agriculture when he arrived on the vineyard in 1996. We got the certification on 2010 vintage. 

To continue our philosophy, we engage in 2007 in biodynamic agriculture. It permits to produce qualitative grapes by improving the fertility of the soils. Today, it is of major importance to give back to the soils their total vitality.

These practices permitted to give to our vines a new youth thanks to the use of horn-manure and silica preparations, sprayed in the vines while respecting the rythm of the cosmos and the nature cycle. 

This approach takes day after day more and more depth thanks to the involvement of each person of the team.
